LAYERED BANANA PUDDING
My mother gave me this recipe, which an old friend had shared with her. When my children were still at home, we enjoyed this satisfying pudding often, and now I make it for company. - In a large saucepan, combine the flour and brown sugar. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter and vanilla. Cool to room temperature without stirring. Fold in the whipped cream. , Layer a third of the pudding in a 2-qt. glass bowl; top with half of the bananas. Repeat layers. Top with remaining pudding. Sprinkle with nuts if desired. Cover and refrigerate for at least 1 hour before serving.

MY BEST BANANA PUDDING DESSERT
I have been asked to make this every year at Thanksgiving. Thought I would share my way of making banana pudding.

- In a large mixing bowl beat together vanilla pudding mix and milk for 2-3 minutes until it begins to thicken. Blend in the sweetened condensed milk and mix until smooth. Stir in vanilla extract and fold in the thawed Cool Whip.
- In a 13x9x2 glass dish layer the bottom with Nilla wafers, add a layer of sliced bananas over top of wafers. Pour enough pudding mixture over top of the first layer of wafers and bananas to cover,leaving some pudding for more layers.
- Repeat layers of wafers,bananas and pudding.
- End with a few wafers on top.
- Cover and chill in refrigerator for several hours.

- Heat oven to 350ºF.
- Crush 30 wafers; mix with next 4 ingredients. Spread onto bottom of rimmed baking sheet sprayed with cooking spray. Bake 8 to 10 minute or until golden brown, stirring after 5 minute Cool.
- Beat pudding mixes and milk in medium bowl with whisk 2 minute (Pudding will be thick.) Stir in 1 cup whipped topping.
- Layer 1/3 of the crumb mixture and half each of the bananas and pudding in 2-qt. bowl; repeat layers.
- Beat cream cheese and granulated sugar in medium bowl with mixer until blended. Gently stir in 1 cup of the remaining whipped topping spread over top of dessert, sealing to edge of bowl. Sprinkle with remaining crumb mixture. Refrigerate 3 hours.
- Serve topped with remaining whipped topping and whole wafers.

- Prepare an 11 x 7-inch baking pan.
- in a bowl, mix all crust ingredients.
- Pat lightly into the baking pan.
- Refrigerate for 1 hour.
- Meanwhile, with an electric hand mixer, mix the cream cheese and icing sugar until well blended (about 2 minutes).
- Fold in (do not beat) 2 cups Cool Whip thawed topping.
- Remove the crust from the fridge; spread the cream cheese mixture evenly over the crust.
- Return back to the fridge.
- (At this point, the dessert may be left covered in the fridge overnight, and the last stage may be finished the next day if desided) Prepare the pudding mix on top of the stove in a heavy-bottomed saucepan, (be careful not to scotch the bottom) or it can be prepared in the microwave, (my prevrence is the microwave, as I always seem to end up with a scortched saucepan bottom) Leave sit in the fridge for 1 hour to thicken and cool.
- After 1 hour,slice the bananas into pieces.
- Remove the dessert from the fridge; place the banana slices evenly over the cream cheese layer.
- Gently spread the prepared pudding over the bananas.
- Top with 2 cups (or more) Cool Whip topping.
- Refrigerate for 2 hours before serving.
- Note: do not replace the pudding and pie filling with instant pudding for this dessert, it will not hold up, and will run all over when the dessert is sliced.
