Steps:
- Mix all ingredients together well.
- Pat into a 1" high rectangle, about 7" by 11" in the centre of a sheet of foil.
- Transfer foil into a 9" by 13" pan.
- Cut through into 1" squares.
- Bake at 350F for 20 minutes.
- Remove pan from oven and separate squares a little bit, using a spatula or long knife.
- Return to oven and bake another 10-15 minutes until cooked through.
- Drain and cool meatballs (or squares) and freeze on a cookie sheet. Package up when frozen and use in any recipe calling for meatballs. (I substitute them for the meat cubes in Oven Mushroom Stew, which I will also be posting today).

AROMATIC LAMB MEATBALLS

- Put the lamb into a bowl and add the scallions. Sprinkle over the spices, salt, and semolina, and then beat the egg adding to the bowl. Work everything together thoroughly with your hands, and then cover with plastic wrap and leave in the refrigerator for half an hour.
- Line a baking sheet with plastic wrap and scoop out a scant teaspoon of the mixture. Roll in your hands to form the meatball and place on the lined baking sheet. Have a bowl of cold water beside you to dampen your hands with; this helps them not get too sticky for rolling the meatballs.
- When you are ready to cook them, heat about 1/2-inch of oil in a frying pan. Line another baking sheet with kitchen towel, and when the oil is hot, fry the meatballs in batches without overcrowding the pan. Cook them for about a minute a side, or until golden brown all over.
CLASSIC MEATBALLS

- Preheat the oven to 425 degrees F. Heat the olive oil and sliced garlic in a large pot or Dutch oven over medium-high heat. Cook, stirring, until the garlic is lightly golden, 2 to 3 minutes. Add the tomatoes, 1 teaspoon salt, a few grinds of pepper and 2 teaspoons oregano. Bring to a simmer, then reduce the heat and simmer gently, stirring occasionally, until the sauce thickens slightly, 15 to 18 minutes.
- Meanwhile, make the meatballs: Combine the beef, parmesan, breadcrumbs, parsley, milk, eggs, grated garlic, 2 teaspoons salt, a few grinds of pepper and the remaining 1 teaspoon oregano in a large bowl. Mix well with your hands. Form into thirty 1 1/2-inch meatballs and divide between 2 baking sheets. Bake until firm and lightly browned, 12 to 15 minutes.
- Carefully remove the meatballs with a spatula and drain briefly on paper towels, then transfer to the sauce. Simmer until tender, 15 to 20 minutes.
- Transfer the meatballs and sauce to a slow cooker and keep on warm.
LIGHT AND FLUFFY MEATBALLS

- Heat olive oil in a skillet. Add onion, cooking until soft but not colored, about 5 minutes. Transfer to a large bowl and cool slightly.
- Combine bread and milk in a bowl to soak for 5 minutes. Squeeze excess milk from bread and finely chop. Add chopped bread to the bowl with onions. Add all the remaining ingredients except the tomato sauce. Gently fold with hands to incorporate ingredients, but do not overmix or meatballs will be tough.
- Bring tomato sauce to a simmer in a large deep-sided skillet. Pinch 1/4 cup of the meat mixture and gently form a ball with wet hands. Drop the meatballs, as they are formed, directly into the sauce. Cover and simmer, stirring carefully a few times until meatballs are cooked through, about 30 minutes. Serve meatballs with sauce and grated Parmesan cheese.
HOMEMADE JELLY MEATBALLS
Variation on Sweet/Sour Meatballs. Forget making that special trip to the store for chili sauce when you can make it yourself with ingredients in your pantry

- *Note* For extra lazy meatballs use frozen meat balls, Heinz Chili sauce, and grape jelly however, I promise its not as good.
- Preheat oven to 350F degrees.
- First, make the meatballs: combine all meatball ingredients in a bowl and mix well; shape into 1-inch balls.
- Brown them in a nonstick frying pan until browned all over; drain on paper towel then place in a large ungreased casserole dish.
- Bake in preheated oven for 30 minutes.
- To make sauce, combine tomato sauce, brown sugar, grape jelly, Worcestershire, dinnamon, and nutmeg in crockpot on low heat and stir until smooth.
- Add meatballs to sauce.
- If you want a lot, this recipe doubles well.

EASY MEATBALLS
My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.
- Shape mixture into about forty 1 1/2-inch balls, a little smaller than golf balls, using a teaspoon. Place on ungreased, rimmed baking sheets.
