LEMON GINGER CRANBERRY APPLESAUCE

I wanted a brighter-tasting cranberry sauce instead of one that had just a sweet note of sugar. Using lemonade concentrate made it easy and the ginger was perfect with the tart cranberries. Adding lemon peel would be good with this also, and this is wonderful served on top of turkey soup! Also good for any time of the year.

Lemon Ginger Cranberry Applesauce image

Steps:

  • Stir cranberries, apples, water, sugar, and lemonade concentrate together in a saucepan. Bring to a boil, stirring occasionally, and reduce heat to medium low.
  • Stir ginger and salt into cranberry mixture and simmer until cranberries burst and apples are tender, 20 minutes. Chill in the refrigerator.

Steps:

  • 1. Preheat oven to 350*.
  • 2. Combo apples, 1/4 c brown sugar, 1 TBS flour, lemon juice, lemon peel and ginger in 2qt baking dish. Toss to coat.
  • 3. Combo remaining brown sugar, flour, oats and margarine in small bowl. Mix well. Sprinkle evenly over apple mix.
  • 4. Microwave on HIGH 12-15 minutes or til bubbly.
  • 5. Bake 15-20 minutes or til apples are tender and topping is golden.

Apple Crisps with Dried Cherries and Ginger image

Steps:

  • Make topping:
  • Mix oats, brown sugar, flour, cinnamon and salt in large bowl. Add butter and rub in until coarse crumbs form. Mix in almonds and ginger. (Topping can be prepared 1 day ahead. Cover and refrigerate.)
  • Make filling:
  • Preheat oven to 375°F. Butter twelve 1 1/4-cup soufflé dishes. Combine apples, cherries, sugar, lemon juice, flour and ground cinnamon in large bowl. Mix to blend well. Divide filling among prepared dishes.
  • Sprinkle topping over apples. Bake until topping is golden brown, about 40 minutes. Serve warm with ice cream.

For topping
1 1/4 cups old-fashioned or quick oats
1 cup plus 2 tablespoons (packed) dark brown sugar
3/4 cup all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 cup almonds, lightly toasted, chopped
1/2 cup chopped crystallized ginger
For Filling
4 pounds Granny Smith or Pippin apples, peeled, cored, sliced
1 1/2 cups dried tart cherries
1/2 cup sugar
1 tablespoon fresh lemon juice
1 tablespoon all purpose flour
3/4 teaspoon ground cinnamon
Vanilla ice cream

Apple Crisp With Fresh Ginger image

Steps:

  • Peel, quarter and core apples and slice each into sixteenths.
  • Mix slices with lemon juice, zest and grated ginger.
  • Cut butter into small bits and mix with flour, sugar and cinnamon until mixture resembles coarse crumbs.
  • Place apples in bottom of 4 buttered baking dishes (1 1/2- to 2-cup capacity) and sprinkle butter mixture over top.
  • Bake at 350 degrees for 35 to 40 minutes, or until apples are cooked but still hold their shape.
  • Serve with clotted cream or heavy cream alongside.

Uncover, stir, and add the cinnamon, cardamom, ginger, and salt and stir again. The apple should be tender and the juices should be thick.
  • Make the topping: In a small bowl, combine the oats, almond flour, walnuts, brown sugar, cinnamon, and salt. Use your hands work in the firm coconut oil until the mixture crumbles. If the mixture is too dry, add a few drizzles of water until the mixture starts to stick together when pinched.
  • Scoop the apple filling into the ramekins, top with the crumble (you may have a little bit extra) and bake for 15 to 20 minutes or until lightly crisp on top.
