Steps:

  • In a heavy saucepan, combine egg yolks, 1-1/4 cups sugar, lemon juice and egg whites. Bring to a boil over medium heat; cook and stir for 8-10 minutes or until mixture reaches 160° or is thick enough to coat a metal spoon. Remove from heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in lemon zest. Transfer to a bowl, press plastic wrap onto surface of custard. Chill for 2-3 hours or until partially set., In a large bowl, beat cream on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Gradually fold whipped cream into the cooled lemon mixture. , Arrange 24 ladyfingers around the edge of an ungreased 9-in. springform pan. Arrange 16 ladyfingers on bottom of pan. Spread with half the lemon mixture. Layer with remaining ladyfingers; top with remaining lemon mixture., Cover and freeze overnight. Remove from the freezer 5 minutes before cutting. Remove sides of the pan. Garnish with lemon slices and mint.

  • Preheat the oven to 350 degrees F. Make the crust: In a mixing bowl, stir together the graham cracker crumbs, sugar and butter until fully combined. Press the mixture firmly into a 9-inch pie plate. Set aside.
  • Make the filling: In a medium bowl, mix the condensed milk, lemon juice, zest and egg yolks. Pour into the crust. Make the meringue: Beat the egg whites and cream of tartar in a medium bowl with an electric hand mixer until soft peaks form. Gradually beat in the sugar until stiff peaks form. Steps:

  • For the pie crust: Put the flour and butter in a food processor and pulse until it has the texture of breadcrumbs. If using your hands, rub the butter and flour together until the mixture resembles wet sand. Add the sugar, salt and egg yolks, and stir together with a knife.
  • Press the mixture together into a ball. If the pastry feels very dry, add the cream, bit by bit, until it comes together.
  • Press the dough into a disc, wrap in plastic wrap and put it in the refrigerator to rest for 30 minutes.
  • For the lemon curd: Meanwhile, in a large, heat-proof bowl, whisk the eggs with the yolks and sugar until the mixture is light and yellow. Place the bowl over a pot of simmering water and whisk in the lemon juice. Cook, stirring constantly, until very thick, 15 to 20 minutes. Remove from the heat and stir in the lemon zest and butter until melted and mixed in. Transfer to a bowl, let cool completely, and then refrigerate with a piece of plastic wrap pressed directly on the surface.
  • Blind bake the crust: Roll the dough out on a lightly floured work surface to about 1/4-inch thick; fit into a 9-inch pie dish and crimp the edges.
  • Place a piece of parchment paper into the pie crust and fill with dried beans or pie weights. Bake until the crust is starting to set and the edges are browning, 20 minutes. Remove the parchment and beans and continue baking until completely golden and crisp looking, another 10 minutes. If the edges brown before the center cooks, cover them with some foil. Let cool completely.
  • At least 3 hours before you are ready to serve, add the lemon curd to the pie shell and refrigerate. When you are ready to serve, make the meringue.
  • For the meringue: Put the egg whites and sugar into a large bowl set over a double boiler. Whisk constantly until the sugar melts and the mixture is very thin and warm.
  • Pour the egg white mixture into the bowl of a stand mixer fitted with the whisk attachment and add the vanilla. Beat on high speed until stiff peaks form, about 5 minutes. Turn the speed to low and continue to beat until cool, about 10 minutes.
  • Top the pie with the meringue by either piping with a pastry bag or spreading with an offset spatula to form peaks. Use a pastry torch to brown the meringue and serve.

  • Remove the dough from the refrigerator and on a lightly floured surface, roll out to a 12-inch circle. Transfer the dough to a 9-inch pie pan, pressing gently to fit, trim the edge to within 1/2-inch of the pan, turn under, and crimp decoratively. Refrigerate for 30 minutes to 1 hour.
  • Preheat the oven to 375 degrees F.
  • Line the pie shell with parchment paper and fill with pie weights, dry beans, or rice. Bake until the crust is set, about 12 minutes. Remove the parchment paper and weights and bake until lightly colored, 8 to 10 minutes. Cool on a wire rack before filling. Combine the granulated sugar, cornstarch, milk, water, and pinch of the salt in a large, non-reactive saucepan, whisk to combine, and bring to a simmer over medium heat, whisking occasionally. As the mixture reaches a simmer and begins to thicken and turn clear, 4 to 5 minutes, whisk in the egg yolks, 2 at a time. Slowly add the lemon juice, whisking constantly, and add the zest and limoncello. Add the butter, 1 piece at a time, and whisking constantly, return to a simmer. Remove from the heat and pour immediately into the prepared pie crust.
  • Beat the egg whites, cream of tartar, and remaining pinch salt in a large bowl with an electric mixer until soft peaks form. Beating constantly, gradually add the confectioners' sugar and beat until glossy stiff peaks form, being careful not to over beat, as this will make the meringue difficult to spread.
  • Transfer the meringue to a pastry bag fitted with a medium star tip. Working 1 row at a time, pipe the meringue across the top of the hot lemon filling in a zigzag pattern, alternating direction with each row. Cover the pie filling completely, going out to the pastry edges, so the meringue does not draw up or weep during baking. (Alternatively, spread the meringue evenly over the pie filling using a rubber spatula, smoothing out to the pastry edges. Make decorative peaks in the meringue using a dull knife or the back of a spoon.)
  • To quickly cook the meringue, preheat the broiler with the rack in the highest position. Place the pie under the broiler and cook until the meringue is set and golden brown, 1 to 2 minutes, watching carefully to avoid burning. (Alternatively, the meringue can be cooked in a preheated 325 degree F oven until set and golden brown, 14 to 16 minutes.)
  • Transfer the pie to a wire rack to cool completely before serving.
  • Sift the flour, sugar, and salt into a large bowl. With your fingers, work the butter and shortening into the dry ingredients until the mixture resembles coarse crumbs. Add 3 tablespoons of the ice water and work with your fingers just until the dough comes together, adding more water as needed, 1 teaspoon at a time, to make a smooth dough, being careful not to overwork the dough.
  • Form the dough into a disk shape, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes before using.

  • For the crust: Preheat the oven to 350 degrees F. Grease a 12-inch tart pan with removable bottom with some oil.
  • Pulse the butter, sugar, salt and cookies in a food processor until combined. Firmly press the crumb mixture into the prepared tart pan (the mixture will come only halfway up the sides). Bake until golden brown, about 10 minutes. Let cool completely.
  • For the filling: In a heavy saucepan, whisk together the sugar, cornstarch and salt. Add the milk and 1 cup water and continue to whisk until the cornstarch is dissolved. Cook over medium-high heat, whisking, until the mixture comes to a boil, 3 to 5 minutes; it will start to thicken to a custard-like texture.
  • In a medium bowl, whisk together the egg yolks. Gradually mix the yolks into the thickened cornstarch mixture in the saucepan. Continue to whisk until combined, then remove from the heat. Whisk in the butter and lemon zest and juice. Let cool slightly, then whisk in the tequila. Cover the filling with plastic wrap and set aside.
  • For the meringue: With an electric mixer in a large bowl, beat the egg whites with the cream of tartar and a pinch of salt until soft peaks form, 2 to 3 minutes. On slow speed, gradually add the sugar and continue to beat until stiff peaks form, another 1 to 2 minutes.
  • Pour the filling into the tart pan and spread over the crust. Pipe dollops of the meringue with peaks all atop the filling in circles.   • For the pie crust: Pulse the flour, shortening, sugar, salt and vinegar in a food processor until the mixture looks like damp sand, about 10 pulses. Add the butter and pulse until you can still see large pea-sized pieces. Sprinkle in 3 tablespoons ice water and pulse until the dough begins to come together. Pinch the dough; if it doesn't hold together, add up to 3 more tablespoons ice water, 1 tablespoon at a time, until the dough holds together when pinched. Lay out a sheet of plastic wrap and dump the dough onto the plastic. Using the edges of the plastic, press the dough into a disc. Wrap tightly and refrigerate until firm, at least 1 hour and preferably overnight. (Freeze up to 2 months.)
  • On a lightly floured work surface, roll the dough out into a 13-inch round. Place in a 9-inch pie dish, gently pressing the dough into the edges and letting the excess dough drape over the sides. Refrigerate for 2 hours.
  • Preheat the oven to 375 degrees F.
  • Trim any excess dough with a paring knife and crimp the edges decoratively or press them down with the tines of a fork. Prick the dough on the bottom all over with a fork. Place a sheet of parchment paper inside the dough and fill with pie weights or uncooked rice or beans. Bake for 10 minutes. Carefully remove the parchment and weights and bake until the crust is deep golden brown on the edges and lightly golden in the center, 10 to 12 minutes more. Let the crust cool to room temperature.
  • For the filling: Whisk together the sugar, cornstarch and salt in a medium saucepan. Add the lemon juice and 1 1/2 cups water and whisk to combine. Whisk the egg yolks in a separate medium bowl. Place the sugar mixture over medium heat and cook, continuing to gently whisk, until the mixture begins to bubble and is extremely thick. Temper the eggs yolks by slowly adding half of the hot sugar mixture to the yolks while constantly whisking. Add the tempered yolks to the saucepan and return to the heat. Bring the mixture back to a simmer and cook, stirring constantly with a rubber spatula, for 1 minute. Remove from the heat and stir in the butter and lemon zest until completely melted and incorporated. Pour the filling directly into the pie crust and cover with plastic wrap pressed directly against the surface of the filling (see Cook's Note). Refrigerate while you make the meringue.
  • For the meringue: Add the egg whites to the bowl of a stand mixer fitted with the whisk attachment along with the sugar, cream of tartar and salt. Whisk together to combine. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl is not touching the water. Cook, whisking constantly, until the sugar is dissolved and the mixture feels hot to the touch. Transfer the bowl to the mixer and add the vanilla. Whisk on medium-high speed until stiff peaks form, 5 to 6 minutes.
  • Remove the plastic wrap from the pie and gently mound the meringue on top of the filling. Use an offset spatula to make sure the meringue completely covers the filling and meets the crust all around the edges. (This will seal in the filling and help prevent weeping.) Use the offset spatula to create swirls and peaks in the meringue. Toast the meringue using a kitchen torch or broil in the oven until golden brown, keeping an eye on the meringue if broiling, 1 to 2 minutes. Refrigerate the pie until the filling is completely cool and set, about 4 hours.

Ultimate lemon meringue pie image

Steps:

  • For the pastry, put the plain flour, butter, icing sugar, egg yolk (save the white for the meringue) and 1 tbsp cold water into a food processor. Pulse until the mix starts to bind - make sure the mix is not overworked.
  • Tip the pastry onto a lightly floured surface, gather together until smooth, then roll out and line a 23 x 2.5cm loose-bottom fluted flan tin. Trim and neaten the edges. Press pastry into the flutes. The pastry is quite rich, so don't worry if it cracks, just press it back together. Prick the base with a fork, line with foil, shiny side down, and chill for 30 mins-1 hr (or overnight).
  • Put a baking sheet in the oven and heat the oven to 200C/180C fan/gas 6. Bake the pastry case 'blind' (filled with dry beans) for 15 mins, then remove the foil and bake a further 5-8 mins until the pastry is pale golden and cooked. Set aside. Can be done a day ahead. Lower the oven to 180C/160C fan/gas 4.
  • While the pastry bakes, prepare the filling. Mix the cornflour, golden caster sugar and lemon zest in a medium saucepan. Strain and stir in the lemon juice gradually. Make the orange juice up to 200ml with water and strain into the pan. Cook over a medium heat, stirring constantly, until thickened and smooth.
  • Once the mixture bubbles, remove from the heat and beat in the butter until melted. Beat the egg yolks (save white for meringue) and the whole egg together, stir into the pan and return to a medium heat. Keep stirring vigorously for a few minutes, until the mixture thickens and plops from the spoon. (It will bubble, but doesn't curdle.) Take off the heat and set aside while you make the meringue.
  • Put the egg whites in a large bowl. Whisk to soft peaks, then add 100g of the golden caster sugar a spoonful at a time, whisking between each addition without overbeating. Whisk in the cornflour, then add the remaining 100g of sugar as before until smooth and thick.
  • Quickly reheat the filling and pour it into the pastry case. Immediately put spoonfuls of meringue around the edge of the filling (if you start in the middle, the meringue may sink), then spread so it just touches the pastry (this will anchor it and help stop it sliding). Pile the rest into the centre, spreading so it touches the surface of the hot filling (and starts to cook), then give it all a swirl.
  • Return to the oven for 18-20 mins until the meringue is crisp and slightly coloured. Let the pie sit in the tin for 30 mins, then remove and leave for at least another 30 mins-1 hr before slicing. Eat the same day.

  • 1. Preheat oven to 350°F. Prepare the crust as directed through Step 3 in the Classic Pie Crust recipe to fit a 9-inch pie plate. Prick the crust all over with a fork, then line with foil and fill with dried beans or pie weights. Bake the crust in the center of the oven until very light golden, about 8 minutes. Remove the foil and beans or pie weights; bake until light golden, 5 minutes more. Cool on a rack. Raise oven temperature to 400°F.
  • 2. Prepare the filling: Combine the sugar, cornstarch and salt in a saucepan. Slowly add the water, stirring until smooth. Place over medium heat and bring to a gentle boil, stirring constantly. Boil to thicken, about 1 minute; remove from the heat.
  • 3. Whisk the egg yolks in a bowl. Whisking constantly, slowly pour about 1/4 cup of the hot sugar mixture into the yolks. Slowly pour the egg mixture back into the saucepan, whisking until smooth. Stir in the lemon juice, zest, and butter, then return the pan to the heat. Bring to a boil, stirring constantly, and boil to thicken for 1 minute; remove from the heat. Pour the filling into the prepared pie crust.

  • Finely chop ginger with 1 cup+ 6 tblsps sugar in mini-processor until moist paste forms, about 25 seconds.
  • Combine lemon juice, water and ginger paste in medium saucepan.
  • Stir over medium heat until sugar dissolves.
  • Bring to boil.
  • Remove from heat.
  • Let steep 1 hour at room temperature.
  • Strain lemon mixture into bowl, pressing on solids.
  • Discard solids.
  • Return liquid to saucepan.
  • Add cornstarch; whisk until dissolved.
  • Whisk in yolks.
  • Whisk over medium-high heat until mixture boils and thickens, about 5 minutes.

Steps:

  • Combine the cornstarch, 1 1/4 of a cup of sugar, lemon juice and lemon rind.
  • Seperate the eggs and beat the egg yolks. Add to lemon mixture.
  • In a sauce pan over medium heat, Gradually add boiling water. Heat the mixture to a gentle boil and continue for 4 minutes.
  • Add the mixture to the pie shell.
  • FOR MERINGUE: beat the egg whites using a mixer until stiff, then beat in the remaining 6 T of sugar.
  • Spread the Meringue over the hot pie. Be sure to seal the edges with mergingue.
  • Bake at 425 degrees in a hot oven for 4-5 minutes or until the tips of the meringue are golden brown.
  • Let cool and serve cold.

For some UNKNOWN reason, I seem to make it more often in the cooler months of the year than in the spring or summer! I haven't included the preparation time here mainly because I usually make the pastry case well in advance.

Steps:

  • Sift the flour and icing sugar into a bowl.
  • Rub in the butter.
  • Add the egg YOLK and enough water to make the ingredients cling together.
  • Press the dough into a ball and knead lightly on a lightly floured surface until smooth.
  • Cover/wrap and refrigerate for 30 minutes.
  • Then, roll the dough out, large enough to line a 24cm flan tin.
  • (ensure the tin is lightly greased before placing the pastry dough in) AT THIS STAGE you can either trim the edges now, or, wait until the pastry has been baked in the oven- this way the pastry will not"shrink" away fron the sides!
  • (or atleast ALLOWS for any"shrinkage") Line the pastry with baking paper and fill with rice or beans.
  • Bake in moderately hot oven (210-230'C) for 10 minutes after which time remove the paper and rice/beans and bake a further 10 minutes- or until the pastry is lightly browned.
  • Cool to room temperature.
  • Now make the filling and spread it into the pastry case: Combine the cornflour and sugar in a pan and GRADUALLY stir in the lemon juice and water.
  • Stir until smooth and then stir over heat until the mixture boils (and thickens)- the mixture should be VERRRY thick!
  • Reduce the heat and QUICKLY stir in the grated lemon rind, egg YOLKS and butter.
  • Stir until the butter is melted then cover and cool to room temperature.
  • Now for the MERINGUE!
  • Beat the egg WHITES until soft peaks form, then GRADUALLY add the castor sugar.
  • Beat well until sugar is dissolved.
  • Spread the meringue on top or the filling.
  • Bake in MODERATE oven (180-200'C) for about 5 minutes or until the meringue is lightly browned.
  • TIP: ensure the meringue covers the edge of the pastry case- this will prevent the meringue from'sliding' in from the edge!

Steps:

  • Mix 1 1/4 cups sugar and 6 TBS cornstarch together in the top of a double boiler.
  • Add the two cups of water.
  • combine egg yolks with lemon juice and beat until well mixed.
  • Add to the previously mixted sugar cornstarch and water.
  • Cook over boiling water until thick--- about 25 minutes (I use a heavy cast aluminum pan with a low heat. I don;t like cooking with double boiler) I stir conntinuously with a wire wisk until thickened.
  • Turn heat off.
  • Add butter, vinegar, and lemon extract and stir till thoroughly blended and butter is melted.
  • Pour mixture into 9-inch pie shell and let cool.
  • Cover with Meringue and brown in oven.
  • NEVER FAIL MERINGUE Blend 4 TBS cornstarch and the 2 TBS of cold water in a sauce pan.
  • Add 1/2 cup boiling water and cook stirring until clear and thickened.
  • Let stand until COMPLETELY COLD.
  • With electric beater at high speed, beat egg whites until foamy.
  • Gradually add 6 TBS sugar and beat until stiff but not dry.
  • This is the part that was hardest for me cause you just have to use your own judgement.
  • If the peaks stand straight up when you lift the beaters it is too much.
  • You want the peaks to lift up when you take the beaters out and then gentlyfold over on the tops.
  • Kinda like a soft serve ice cream cone.
  • Turn mixer to low speed, add salt and vanilla.
  • Gradually beat in cold cornstarch mixture.
  • Turn mixer to high again and beat well.
  • Spread meringue over cooled pie filling.
  • Bake at 350* for 12 minutes or until top is browned.

  • Heat oven to 350°F.
  • Combine wafer crumbs, 2 Tbsp. sugar and butter; press onto bottom and up side of 9-inch pie plate. Bake 5 min.
  • Mix remaining sugar and cornstarch in medium saucepan. Gradually stir in water until blended. Bring to boil on medium heat; cook 8 min., stirring constantly. Remove from heat. Add dry gelatin mixes and zest; stir 2 min. until gelatin is completely dissolved. Refrigerate 1 hour or until slightly thickened, stirring occasionally. Pour into crust.
  • Microwave marshmallows and milk in large microwaveable bowl on HIGH 1-1/2 min. or until marshmallows are completely melted, stirring after 1 min.; stir until blended. Refrigerate 15 min. or until completely cooled. Whisk in COOL WHIP; spread over pie. Refrigerate 3 hours or until firm.
