MEDITERRANEAN TILAPIA
We had some beautiful tilapia fillets, but no recipes! I had recently bought some amazing sun-dried tomatoes packed in oil, and decided to invent a slightly Mediterranean fish dish for a quick weeknight dinner. My husband is a recipe purist, always follows them to the letter, but after this, he's learned to trust my inventions!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the sun-dried tomatoes, olives and capers. Set aside.
- Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice.
- Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. Check after 10 minutes, so as not to overcook, or the fish may be dry. When fish is done, top with the tomato mixture, and serve.

- In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

LEMON GARLIC TILAPIA
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
- Rinse tilapia fillets under cool water, and pat dry with paper towels.
- Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
- Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

Steps:
- Preheat oven to 375.
- Coat the bottom of a baking dish with olive oil.
- Place the tilapia fillets in the pan.
- Sprinkle desired amount of garlic salt, cajun seasoning, and pepper over tilapia pieces.
- Press several sprigs of cilantro on top of each piece.
- Bake tilapia for 8 to 12 minutes.
- Enjoy alone or with lemon!

Something that I literally threw together one night using some mixed recipe styles from "Live for Life", a healthy eating recipe book, and what I had on hand. My wife has asked me to make this literally every week since I have made this for her. It still has not grown old. I will try to relay the quantities the best as I remember...

Steps:
- Season both sides of fillet with light layer of Garlic Powder and Lemon/Pepper Seasoning. Set aside.
- Put Oil in a large skillet and bring up heat to Med-Low.
- Add garlic clove and allow to simmer, slightly-browned. Move oil and garlic around pan for easy coating.
- Place fillets into skillet, adding cooking wine and lemon juice. Cover to steam.
- Cook for 7 minute or until fish flakes. Do not touch the fillets, do not flip over the fillets.
BROILED LEMON-PEPPER TILAPIA
Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiler pan with aluminum foil.
- Place fillets on the prepared pan. Stir parsley and lemon-pepper seasoning into the melted butter in a small bowl. Baste fillets with the butter mixture using a turkey baster, using the entire mixture. Sprinkle fillets with bread crumbs.
- Broil in the preheated oven until the thickest part of the fish flakes easily with a fork, 7 to 9 minutes.
- Remove fish from the pan and place it on a platter. Remove the foil very carefully from the pan, taking care not to spill the excess butter sauce, and pour over the fish. Serve immediately.

- Preheat broiler.
- Purée cilantro, oil, chiles with some adobo sauce, water, cumin, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth, then coat fish with sauce.
- Line rack of a broiler pan with foil, then broil fish 3 to 4 inches from heat until just cooked through, 6 to 9 minutes.
