CUCUMBER SLICES WITH SMOKY SUNFLOWER SEED PâTé
A fresh, healthy, make-ahead appetizer made with a creamy sunflower seed and fresh dill pâté. Garnish how you like depending on the season.

Steps:
- Place sunflower seeds in a medium bowl or jar. Cover with 2 cups of water. Set aside and let soak for at least 4 hours, up to 24 hours.
- Drain and rinse sunflower seeds. Add seeds to the pitcher of a high-speed blender or (preferred) a food processor fitted with the "S" blade. Add 1/3 cup water, garlic, lemon juice, 1/8 teaspoon smoked paprika, 2 tablespoons dill, and 1/2 teaspoon salt. Puree until smooth, 1-2 minutes. Taste and adjust seasonings if desired.
- Set cucumber slices on a platter. Spoon pâté into a zipper bag. Snip the end off and squeeze pate onto the cucumber slices. For a more professional look, use a pastry bag affixed with your favorite tip.
- Garnish each slice with fresh dill and borage or cherry tomatoes. Serve immediately.

- In a bowl, mix the mayonnaise, milk, sugar, and vinegar until smooth. Place cucumber slices in the bowl, and toss to coat with the dressing. Season with salt and pepper. Chill 30 minutes in the refrigerator before serving.

LIGHT AND TASTY CUCUMBER SLICES
This is another attempt at me trying to find low fat and low calories 'treats' that also pack a bit of flavor. I am a pickles freak so I would pretty much be happy with any cucumber and vinegar combo but I especially like these when I want a more delicate flavor. They are good as a side with dishes like salmon or I even sometimes just put a few on a sandwich when I want some zest without any fat. I make this with Splenda because I really don't want the sugar as I am counting fat and calories.

Steps:
- Slice the cucumber into really thin slices. I use my food processor to do this and it just takes a few seconds.
- In a bowl combine the white vinegar, Splenda, garlic and dill and just stir until the Splenda is dissolved.
- Pour wet mixture over the cucumber slices and stir so that the mixture has coated all of the slices.
- You can eat right away but they are much better if you put them in an air tight container and chill them in the fridge for a few hours (I do them overnight).

- In a mixing bowl, combine the cucumber slices, onions, and green peppers.
- In a saucepan over medium heat, combine the salt, celery seed, vinegar and sugar. Bring the mixture to a boil. Allow the mixture to cool for 10 to 15 minutes.
- Combine the mixture in the mixing bowl with the mixture in the saucepan. Pack into sterile jars and refrigerate for 24 hours.
