EASY APPLE CRISP
Four apples and a few baking staples are the key to whipping up a crowd-pleasing dessert at a moment's notice. There are few more universally loved fall desserts than this-tender, juicy apples topped with a perfectly crunchy streusel, all toasty and warm from the oven. And the enjoyment of this easy apple crisp isn't just in the eating. The fact that this can be made on the fly makes it a favorite among those doing the baking as well. Steps:
- Heat oven to 375°F. Spray bottom and sides of 8-inch square pan with cooking spray.
- Spread apples in pan. In small bowl, mix brown sugar and cinnamon. Sprinkle mixture over apples. Pour water over apples.
- In medium bowl, mix flour, granulated sugar and softened butter, using pastry blender or fork, until crumbly. Sprinkle over apples.
- Bake 45 to 50 minutes or until topping is golden brown and apples are tender when pierced with fork. Cool 10 minutes before serving. Serve with ice cream or whipped cream.

COOKING LIGHT'S EASY & CRISPY BAKED FISH FILLETS
From Cooking Light Magazine. This is a healthy and delicoius recipe that bakes a moist and tenderv fish with a crispy outside. You won't even miss the fat! Haddock, cod, or tilapia would make good substitutes for the grouper but you can try it with any fish you like or have on hand. Adjust the baking time depending on the thickness of the fish.

- Place fish in an 11 x 7-inch baking dish coated with cooking spray. Combine lime juice, mayonnaise, onion powder, and pepper in a small bowl, and spread over fish. Sprinkle with breadcrumbs; drizzle with butter. Bake at 425° for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.

PEACH CRISP (LIGHT)
Adapted from an old newspaper clipping and posted here for safekeeping. This is a light, "guilt free" version of peach crisp. Next time I make this, I want to try sweetening the peaches with agave nectar but would still use brown sugar in the topping.

- Preheat the oven to 400 degrees F.
- For the crisp: Mix together the flour, brown sugar, cinnamon and salt in a bowl. Using a pastry blender, 2 knives or a food processor, cut in the butter. Stir in the oats.
- For the fruit: Toss the fruit with the cornstarch, granulated sugar as needed and the lemon zest if using.
- Transfer the fruit mixture to a baking dish and top with the crisp mixture. Bake until the middle is warmed through and the top is crispy and golden brown, 50 to 55 minutes.

LIGHT AND CRISP VANILLA WAFERS

- Position racks in the upper and lower thirds of the oven; preheat to 400 degrees F. Line 2 baking sheets with parchment paper.
- Sift the cake flour onto a sheet of parchment paper and set aside.
- Combine the whole egg, egg white, sugar, baking powder, salt, vanilla extract and water in the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed until lightened in color and thickened, 3 to 4 minutes.
- With the mixer running on low speed, slowly pour in the butter and oil. Increase the speed to high and beat for 30 seconds.
- Turn off the machine and add all of the flour. Mix on low speed. Stop to scrape the bowl and whisk. Mix on low speed until the batter is smooth and thick.
- Transfer the batter to an 18-inch (or larger) pastry bag fitted with a coupler and 1/2-inch round tip. Alternatively, use a gallon-size resealable plastic bag with a corner snipped off to make a 1/2-inch opening.
- Pipe 5 quarter-size mounds of batter in 8 rows on each of the prepared baking sheets. You should have 80 mounds total. Pipe any extra batter into the empty spaces.
- Bake, rotating and switching the positions of the baking sheets halfway through, until the edges of the wafers turn a deep golden brown, 14 to 15 minutes total.
- Let the wafers cool completely on the baking sheets. They will crisp as they cool.

- Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
- To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
- To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.
