Steps:

  • To make the pastry, rub the butter into the flour, then mix in the golden caster sugar and a pinch of salt.
  • Combine the pastry into a ball - don't add liquid - and knead it briefly. The dough will be fairly firm, like shortbread dough. You can use the dough immediately, or chill for later.
  • Heat the oven to 200C/180C fan/gas 6. Line 18 holes of two 12-hole patty tins, by pressing small walnut-sized balls of pastry into each hole.
  • Spoon the mincemeat into the pies. Take slightly smaller balls of pastry than before and pat them out between your hands to make round lids, big enough to cover the pies.
  • Top the pies with their lids, pressing the edges gently together to seal - you don't need to seal them with milk or egg as they will stick on their own. Will keep frozen for up to one month.
  • Brush the tops of the pies with the beaten egg. Bake for 20 mins until golden. Leave to cool in the tin for 5 mins, then remove to a wire rack. To serve, lightly dust with the icing sugar. Will keep for three to four days in an airtight container.

Steps:

  • Put all the ingredients for the mincemeat in a bowl and add brandy or rum to cover the fruit. Stir well, then let it rest overnight. The next day, stir again and then divide among sterilized preserving jars.
  • To make the pastry, mix the flour, sugar, and salt in a large bowl. Rub the butter into the mixture until it is the consistency of fine breadcrumbs. Add the water and egg yolk and knead until the mixture comes together into a smooth dough. Alternatively, use a food processor to make the pastry. Wrap the dough in plastic wrap and let it rest for 30 minutes in the refrigerator.
  • Preheat your oven to 350° F. Grease the tart molds with butter and cover the base of each with a small circle of parchment paper. Dust with flour.
  • Briefly knead the pastry until smooth, then pat it into a rectangle and roll it out to a thickness of ⅛ inch. Use a round cutter with a diameter of 2¾ - 3¼ inches to cut out pastry circles. Gently push the pastry rounds into the tart molds. Prick the base or each tart shell three times with a fork.
  • Knead the remaining dough back together and roll it out to cut out the lids-you can choose whichever shape you like, but stars are the most traditional.
  • Divide the 8 ounces of filling among the tarts and press down gently. Place the lids on top and brush with the egg wash.
  • Bake in the middle of the oven for 20-25 minutes until golden brown. Serve warm or cold.

  • Combine the flour, sugar, and salt in a large bowl. Add the butter (or lard/tallow) and use a pastry blender or two knives to cut into the flour until you get pea-sized crumbs(alternatively use a food processor). Stir in the water gradually (or pulse with a food processor) until the dough holds together when you pinch it between your fingers. Wrap the dough with plastic wrap and chill for at least 30 minutes.
  • Roll 2/3 of the pie crust out onto a floured surface to 1/8 inch thickness. Cut circles out of the pie crust to fit into the tins. Roll out the remaining pie crust to the same thickness and cut out circles for lids, or star shapes, or lattices (whichever you prefer). If using circles/lids to fully cover the pies, cut a slit in each pastry lid to allow the hot air to escape. IF MAKING A FULL SIZE PIE: Preheat to 375 F and bake it for 15 minutes, then reduce the heat to 350 F and bake for another 30 minutes or so.
  • Carefully press the pie crusts into the tins and fill them with mincemeat then top with the pie crust lids, stars, or lattices and press the edges together to seal them. Lightly brush the tops with milk or an egg wash.Bake the pies for 10-15 minutes or until golden brown. Carefully remove them from the muffin or tart tins, transfer them to a wire rack and sprinkle with powdered sugar.

  • To make the pastry dough: Place the flour, salt and cubed butter in a food processor (alternatively this can be done by hand) and pulse until the mixture resembles coarse breadcrumbs. Gradually add the ice cold water and pulse just until the dough comes together (only add as much water as needed). Do not overdo this as maintaining the flecks of butter is critical to achieving a flaky pastry.
  • Turn the dough out onto a floured work surface and roll it out into a rectangle about 1/2 inch thick. Fold each end of the dough into the middle with one end overlapping the other. Rotate the dough 90 degrees. Repeat all the steps. Wrap the dough in plastic wrap and chill for 20 minutes. Repeat the steps again, wrap the dough and chill for at least one hour before using. The pastry dough can be made a few days in advance or frozen.
  • To make the filling: Melt the butter in a medium saucepan and add all remaining ingredients except for the egg white and demerara sugar. Turn off the heat and stir in the rum. Let the filling sit for at least 3-4 hours before using or overnight. The filling can be made a few days in advance. If refrigerated, let the filling sit at room temp for at least 30 minutes before filling the Eccles cakes.
  • To assemble the Eccles cakes: Flour a work surface and roll the pastry out to between 1/8 and 1/4 inch thickness. Per your preference, either cut out rounds or squares. Typical size is about 3.5 inches in diameter. *SEE BLOG POST PICTURES for instructions on making the square version of the cutouts (they're more customizable and don't waste any dough). Place the dough cutouts on a lined baking sheet. Place as much filling on the cutouts as you can while leaving an adequate edge all around them to properly seal the pastries.Lightly brush the edges with water.Gather up the edges towards the center, pressing them gently together to seal. Turn the cakes over with the sealed edges on the bottom. With the sealed edges on the bottom and the smooth surface on the top, gently press the cakes to slightly flatten them. Don't press so hard that the currants break through the dough. Use a sharp knife to cut three parallel slits in the dough.Brush with egg white and sprinkle with demerara sugar (can
