Steps:

  • In a large bowl, combine the egg, oats, ketchup and onion. Crumble beef over mixture and mix well. Coat 4 muffin cups with cooking spray; fill three-fourths full with meat mixture. Spread ketchup over loaves. , Bake at 400° for 15 minutes. Sprinkle with cheese. Bake until no pink remains and a thermometer reads 160°, about 5 minutes longer. Let stand for 5 minutes before removing from muffin cups.

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  • Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.

Steps:

  • In a bowl, beat the egg and milk.
  • Stir in cheese, oats, onion, salt and rubbed sage.
  • Add beef and mix well.
  • (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
  • Sauce: Combine catsup, brown sugar and mustard.

Paleo Mini Meatloaves image

Steps:

  • Heat oil in a saucepan over medium heat. Cook and stir carrots and onion in hot oil until slightly softened, 3 to 7 minutes. Add tomatoes, spinach, garlic, thyme, parsley, salt, and black pepper; bring to a simmer, reduce heat to medium-low, and simmer until flavors combine, about 20 minutes. Cool slightly, 5 to 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Puree vegetable mixture using a stick blender until smooth. Alternatively, pour vegetable mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.
