Steps:
- Mix all ingredients well.
- Spread butter mixture onto both sides of bread.
- Put halves together and wrap in aluminum foil.
- Cook on barbeque or oven at 350 until heated through.

THE BEST GARLIC BREAD
We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

Steps:
- Arrange a rack in the center of oven and preheat to 450 degrees F.
- Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
- Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
- Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

- Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat garlic and butter and oil in microwave for 1 minute or in a small pot over moderate-low heat for 3 minutes.
- Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if using, and parsley. If you added cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.
PARMESAN GARLIC BREAD
This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
- Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
- Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

LOUISIANA MUSSEL "SAUCE PIQUANTE" WITH GARLIC BREAD
Steps:
- Scrub mussels well and remove beards. Finely chop onion, celery, and bell pepper. In a 6- to 8-quart heavy kettle melt butter over moderately low heat and stir in flour. Cook roux, stirring constantly, until color of peanut butter, about 6 minutes. Stir in vegetables and cook, covered, until soft. Stir in tomato paste, broth, tomatoes with juice, and cayenne and bring mixture to a boil, breaking up tomatoes. Simmer sauce, uncovered, stirring occasionally, 15 minutes, or until thickened.
- While sauce is simmering, make garlic bread:
- Preheat broiler.
- Mince garlic and mash to a paste with a pinch salt. In a small saucepan melt butter over moderate heat and stir in garlic paste. Halve bread horizontally and brush garlic butter on cut sides. On a baking sheet broil bread about 4 inches from heat until golden, 1 to 2 minutes.
- Stir mussels into sauce and simmer, covered, 4 to 8 minutes, or until mussels are opened. (Discard any unopened mussels after 8 minutes.) Divide mussels between 2 bowls.
- Season sauce with salt and ladle over mussels. Serve bread on the side.
MY LOUISIANA GRANDMOTHER'S GUMBO (MY VERSION)
When you're cold and damp, this creole stew warms the bones. I took some liberties with her version which was, originally, my Louisiana Great- Grandmother's (circa 1929). I just made some yesterday, chilled it overnight to marry the flavors, and am SO looking forward to tasting it for dinner tonight! You do NOT have to rest it OVERNIGHT. It can be eaten as soon as ready! Enjoy!

- Take a thigh/leg portion and separate the drumstick from the thigh.
- Skin all or half of the chicken pieces.
- Broil off the chicken and sausage until well-browned.
- Cut the sausages into 1/2" slices.
- Add olive oil and butter to a 5 to 6 quart pot on low heat.
- Add 1/3 c flour, the cayenne, nutmeg and wisk gently and quickly until it begins to thicken.
- Add enough juice from the tomatoes to stop the thickening and add the chicken and sausage pieces to the pot.
- Add all the tomatoes, the okra and the rough cut onions .
- Use the tomato can to add water to the pot to just cover the contents of the pot and bring to a boil.
- Using a wooden or plastic spoon that reaches the bottom of the pot and gently loosen any flour which begins to stick to the bottom.
- Reduce heat and simmer until chicken is almost falling off the bone.
- Adjust seasonings to taste and stir occasionally.
- Serve in big bowls and top with boiled rice.
- NOTE: SMALL BONE FRAGMENTS will be present so take care to screen each mouthful before chewing! Nice to have bread plates or saucers for each guest so that they can discard any bones.
- Great with a crispy warm, buttered baguette or garlic bread.
- VARIATIONS:.
- You can pull the chicken off the bone after broiling and cooling and add to the simmering pot until fully cooked and tender.
- We frequently add shelled, jumbo deveined shrimp to the ingredient list.
- Would translate to a slow-cooker easily if you don't require the meats to be broiled first.
