Steps:
- Preheat oven to 400 degrees.
- Drain liquid from canned asparagus into a liquid measuring cup and add enough cream to equal 3 cups of liquid.
- Place drained asparagus in a casserole dish.
- Melt butter over medium heat.
- Whisk in flour and a dash of salt and pepper, allow to cook for 2 minutes.
- Add cream mixture and cook over medium heat, stirring often, until sauce is thickened and bubbly.
- Turn heat to low; add cheese and stir until cheese is melted.
- Pour cheese sauce over the asparagus and heat in the oven for 15-20 minutes.

- Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
- Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.

- Lay the spears in a 5 quart slow cooker.

This easy-to-make casserole was a hit at my house! I used leftovers for part of it, which is always a plus, and it all went together so well. - Fill a large pot with lightly salted water and bring to a rolling boil. Stir in bow tie pasta and return to a boil. Cook uncovered, stirring occasionally, until tender but still slightly firm, about 12 minutes. Drain well and set aside.

- Bring a pot of well salted water to a boil over high heat.
- Trim off up to 1 inch of the woody bottom parts of the asparagus. Cut asparagus in half if necessary to fit your pot.
- Transfer asparagus to the boiling water. Boil until slightly tender, 2 to 3 minutes. Transfer asparagus to a bowl of very cold water using a slotted spoon. Let asparagus cool completely.
- Grate Pecorino Romano cheese finely using a rasp grater.
- Drain asparagus well and slice into very small pieces. Place in a bowl; season with salt and pepper. Add cayenne pepper, grated Pecorino Romano cheese, and bread crumbs. Mix in 1 egg to start. Add the second egg and continue mixing until well combined.

- In a large, heavy stock pot, melt butter over low heat.
- Add onion, beans, potatoes and mushrooms and stir fry for 4 to 6 minutes.
- Add chicken stock and wine to stock pot and stir, then stir in the asparagus and herbs and spices, including garlic; turn heat up to medium or medium-high and bring to a boil.
- Boil, uncovered, for 10 minutes or until all vegetables are tender; turn down heat.
- Stir in milk, then cream cheese, then shredded cheeses; slowly heat, stirring continuously, to dissolve cheese.
- Keep at a simmer but DO NOT allow soup to come to a rolling boil.
- When all cheese has dissolved, remove from heat and fish out the bay leaf and discard.
- Whisk in water as needed to yield exactly 4 quarts.
- Taste; more salt may be necessary.
- Serve immediately, or reheat very gently to serve.

- Heat the grill to high. Lay the bacon on a baking tray in a single layer and grill for 8-10 mins until starting to crisp at the edges. Leave to cool. Heat the oven to 180C/160C fan/gas 4.
- Meanwhile, unroll the pastry sheet and cut into six squares. Pile a small mound of the cheese in the centre of each square, reserving some of the cheese for scattering over later. Trim the woodier ends of the asparagus spears so each one is about 10cm long. Place four spears diagonally across each mound of cheese. Chop the bacon into small pieces and sprinkle over.
- Working with one pastry square at a time, fold the two corners not covered by the asparagus into the centre and pinch the ends together gently to seal. Repeat with the remaining squares, then scatter over the reserved cheese. Can now be frozen for up to three months.

JAN'S CREAM OF ASPARAGUS SOUP FOR THE CROCK POT

Note: This is for a 5-quart crock pot, which is larger than the usual. Cut down the proportions if you have a smaller crock pot.

- Break off and discard the tough, thick end of each asparagus spear.
- Chop the spears into 1/4-inch slices and add to the crock pot along with all remaining ingredients down to and including the white pepper.
- Add water to within 1 inch of the top of the crock pot.
- Cover the crock pot and cook on high for 6-7 hours.
- About two hours before serving, use a slotted spoon to remove most of the vegetables to a blender.
- Use a ladle to add some of the liquid from the crock pot to the blender.
- Puree the mixture and add back in to the crock pot.
- Repeat once or twice more as necessary (you can leave some of the pieces in the crock pot for effect.) Add approximately 1 cup of the half-and-half to the crock pot.
- Add the corn starch to the remaining half-and-half in the carton.
- Close the carton well and shake vigorously.
- Add the mixture to the crock pot.
- Continue to cook on high for 1 hour, stirring occasionally.
- Serve in bowls with a dollop of sour cream and chopped chives sprinkled on the sour cream.

- Preheat oven to 425 degrees.
- Fit pre made pie crust into a 9 inch tart pan, with removal bottom (if you use the crusts that come rolled -- usually don't have to roll out creases).
- Press pastry into sides of pan, put into freezer for 15 minutes.
- Blind bake for 15 to 17 minutes until crust is golden, cool completely.
- Spread asparagus on a large jellyroll pan; spray with cooking spray and shake to get all sides, sprinkle with salt, roast until tender about 10 minutes.
- Cool and transfer to a plate.
- In a large skillet over med heat, melt butter. Add leeks, dill and salt (optional) cover and cook over med low heat until leeks have softened, 5 to 6 minutes.
- Transfer to small bowl.
- In a med bowl, whisk together milk and eggs, leeks and pepper.
- Pour unto crust.
- Arrange asparagus on top of milk mixture; sprinkle top with cheese.
- Bake until filling is set and golden on top, approx 30 minutes.
- Cool on a wire rack 30 minutes.
- Serve warm or at room temperature.
