LOW-FAT HIGH FIBER BLUEBERRY BRAN MUFFINS
These muffins are a great low-fat moist muffin. I used 1/2 cup brown sugar instead of the 2/3 cup called for and I felt they were sweet enough. I also added chopped apples.

Steps:
- Preheat oven to 375 degrees.
- Grease muffin cups or use paper muffin liners.
- Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
- In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
- Beat in bran mixture.
- Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
- Stir into bran mixture until just blended. Fold in blueberries.
- Scoop into muffin cups.
- Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
- Combine bran and brown sugar in a large bowl.
- Pour milk into a microwave-safe glass measuring cup. Heat until almost boiling, about 1 minute. Pour over the bran mixture. Beat with an electric mixer until combined. Let stand until milk is mostly absorbed, about 5 minutes.
- Beat oil, eggs, molasses, and orange zest into the bran mixture.
- Combine flour, sugar, baking powder, salt, and cinnamon in a small bowl. Mix into the batter until just combined. Sprinkle cranberries on top; fold in with a spatula. Divide batter among the prepared muffin cups.

AMY'S LOW FAT BLUEBERRY BRAN MUFFINS
I found this recipe online a long time ago and have tweeked it over time to perfection. Low calorie, low fat, tasty muffins. These freeze very well also! We eat them for breakfast everyday. I double the recipe and freeze and then put them in the microwave for about 30 seconds. I also use 50/50 flour instead of 2 different ones.

- Preheat oven to 375. In sperate bowl combine Wheat Bran and Skim Milk. Let sit 10 minutes while you prepare other ingredients. In large bowl, combine Applesauce, Egg, Vanilla and Brown Sugar. In another small bowl, add Flour, Baking Soda and Powder, Salt and Cinnamon to taste. I usually add about a teaspoon or more. Add Wheat Bran mix to Applesauce mix and stir well. Gradually add Flour mix. Stir well. Add blueberries and stir gently. Scoop about 1/4 cup of mixture into a 12 muffin tin sprayed with Baking Spray. Bake for about 23 minutes or until center of muffin springs back when touched.

- Preheat oven to 400.
- Coat a 12-muffin tin with nonstick cooking spray.
- Whisk the flour with the baking powder and salt and set aside.
- Beat the egg, sugar and margarine with an electric mixer set on medium until smooth.
- Add the orange juice and orange peel and beat again.
- Mix the flour and cranberries into the batter by hand just until combined.
- Spoon the batter into the muffin cups so that each is about two-thirds full.
- Bake for 15 to 20 minutes our until the muffins are lightly browned, puff up and a toothpick inserted in the center comes out clean.
- Cool in the tin set on a wire rack for about 10 minutes.
- Remove the muffins from the tin and eat them warm or let them cool completely on wire rack.
