Mac and Cheese image

Steps:

  • Cook Pasta 1 to 2 minutes shy of packaged directions.
  • In the meantime, Melt butter and saute onions and garlic until soft and translucent.
  • Add Flour and cook for 1 to 2 minutes.
  • Add milk and stir/whisk till it is combined in mixture.
  • Bring to a boil and reduce to a simmer, let simmer until thick, about 5 minutes.
  • Shred all cheese and combine.
  • Add in 6 cups of cheeses to milk and stir until melted.
  • Combined cheese sauce with pasta and transfer to a baking dish.
  • Top with the remaining 2 cups of cheese and put under broiler till the top is crusty and brown.
  • If you want a true baked mac and cheese, bake at 350 for 35-45 minutes. And for a stove top version serve with out baking.

Steps:

  • Melt butter in medium saucepan on low heat. Add flour; whisk until blended. Cook 2 min. or until hot and bubbly, stirring constantly. Gradually stir in milk until blended.
  • Bring to boil on medium heat, stirring constantly. Simmer on medium-low heat 3 to 5 min. or until thickened, stirring frequently.

Mozzarella Mac and Cheese image

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 375 degrees F.
  • Bring a large pot of salted water to a boil over medium-high heat. Add the noodles and cook to al dente per the package instructions. Drain and set aside.
  • In the same pot, melt the butter over medium-high heat. Stir in the flour and cook for about a minute. Add the milk, a cup at a time, whisking or stirring with a wooden spoon after each addition until thickened. Add the mozzarella, Swiss and 1/2 cup Parmesan and stir until melted. Season with salt and pepper. At this point if you want to add fun mix-ins like cut-up hot dogs, crispy bacon, peas or hot sauce, now's the time to do so. Stir in the noodles. It may seem overly saucy at this point, but once it bakes up, it'll be perfect!
  • Pour into a 9-by-13-inch casserole dish. Dollop all over with the pizza sauce. In a medium bowl, toss the breadcrumbs, garlic, crushed red pepper flakes and remaining 1/4 cup Parmesan with a drizzle of olive oil and sprinkle all over the mac and cheese. Bake until browned and bubbly, about 25 minutes. Sprinkle with fresh basil and enjoy!

Icon's Ultimate Macaroni and Cheese with Molten Cheese Sauce image

Steps:

  • For the Macaroni and Cheese Sauce Base: Melt butter in a 4-quart saucepot over medium high heat. Add flour and mix until flour is incorporated into butter. Cook, stirring frequently for 2 minutes. Add milk and chicken broth and continue to cook until sauce is thick and bubbly. Remove from heat and season with mustard, hot pepper sauce, Worcestershire, salt and pepper. Allow to cool before using.
  • For the Topping: Mix all ingredients in a bowl and set aside
  • For the Molten Cheese Sauce: Take about 1/2 cup of the sauce base and warm over a medium burner in a small saucepan. When warm, add cheese and cook until melted. Season as necessary.
  • To make the Macaroni and Cheese: Cook macaroni in salted water, drain and rinse with cold water. Place the yellow cheddar, Gruyere, white cheddar, tomatoes, and pasteurized prepared cheese product in a large mixing bowl. Add 3/4 of the macaroni and cheese sauce base or about 2 1/2 cups, and mix thoroughly. Place the mix evenly into 4 small casserole dishes or 1 large serving plate.   • Preheat the oven to 450 degrees F.
  • Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
  • Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley.   • Pre heat your oven to 350˚.
  • Butter a 2 quart casserole dish.

Macaroni and Beef in Tomato Sauce image

Steps:

  • Cook ground beef, onions, and beef bouillon in a large skillet over medium-med/high heat until beef is browned and onion is softened, adding in the minced garlic about 2 minutes before done. Drain off fat.
  • Add garlic powder, onion powder, crushed red pepper, onion soup mix, brown sugar, canned tomatoes, tomato sauce, & tomato soup. Stir. Add black pepper to taste. Bring to a bubble, reduce heat to medium and let simmer for about 10 minutes, stirring occasionally.
  • While the sauce is simmering, partially cook the pasta (about 3 min short of al dente). Drain pasta, reserve 1/2 cup of pasta liquid and add it to the sauce. Add the pasta to the sauce, and stir well. Bring up to bubbling, turn the heat to med-low, cover, and cook for 5-10 min or until pasta is tender, and has absorbed enough liquid to thicken the sauce, stir occasionally to prevent pasta from sticking to the bottom of the skillet. Let sit for 5 min and the sauce will thicken a little more. Serve.

  • FOR MACARONI AND CHEESE: In med sauce-pan slowly melt cubed cheese over med/low heat taking care not to burn the cheese.
