BAKED MACARONI & CHEESE (WEIGHT WATCHERS)

This recipe is adapted from "America's Most Wanted Recipes: Without The Guilt". This a copycat recipe of Cracker Barrel's Baked Macaroni & Cheese only lightened up. This recipe is Weight Watchers friendly and is 10 WW Points Plus per serving. Serves 10.

Baked Macaroni & Cheese (Weight Watchers) image

Steps:

  • 1. Preheat the oven to 375 degrees. Spray a 2-quart casserole dish with cooking spray; set aside.
  • 2. In a medium saucepan, melt the margarine. While whisking, add the flour, salt, and dry mustard to the margarine. Add the milk and whisk constantly until the sauce thickens a little. Do not boil the milk. Add 1 1/2 cups of the cheese and continue to cook until melted, stirring constantly. Remove from the heat.
  • 3. Meanwhile, cook the macaroni as directed on the package; drain well, but do not rinse.
  • 4. Toss the macaroni with the cheese sauce, coating well; transfer to the prepared casserole dish and top with the remaining 1/2 cup cheese.
  • 5. Toast the slice of bread until it is lightly browned and thoroughly dry. Crumble into bread crumbs. Toss the crumbs with the paprika, then sprinkle over the top of the casserole.
  • 6. Bake for 20 to 25 minutes, until heated through, bubbly; and nicely browned.

2 Tbsp all-purpose flour

2 1/2 c skim milk
2 c shredded low-fat cheddar cheese
8 oz whole wheat elbow macaroni
1 slice sara lee diet wheat bread
1 tsp paprika

We enjoyed this mac n' cheese -- but I really like that it is prepared in individual serving dishes so I don't over estimate or under estimate my serving -- that way I know I only had 5 pts worth of mac n' cheese! Recipe source: Weight Watchers Magazine

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 8 (8 oz) baking dishes (I used custard cups) with Pam and place dishes on a large cookie sheet.
  • Cook macaroni according to package directions, drain.
  • In a large saucepan melt 2 tablespoons of the butter over medium heat. Stir in onion and cook for about 5 minutes or until softened.
  • Stir in flour cook for another minute, stirring occasionally.
  • Whisk in milk. Increase heat and cook whisking occasionally until thickened (3-5 minutes).
  • Whisk in cheeses, salt and pepper. Cook, stirring occasionally until cheese melts (1 minute or so). Remove from heat.
  • Stir in macaroni and tomatoes.
  • Divide mixture among baking dishes.
  • Melt remaining butter (1 TB) in pan over medium heat, add bread crumbs and stir until coated (1 minute). Sprinkle bread crumbs over the mac n cheese.
  • Bake for 25-30 minutes or until casseroles are bubbling.

1/2 lb whole wheat elbow macaroni
3 tablespoons light butter or 3 tablespoons margarine
1 onion, chopped
2 tablespoons flour
2 cups nonfat milk (we use 1 % milk)
2 cups low-fat cheddar cheese, shredded
1/3 cup parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14 1/2 ounce) can tomatoes, diced
1/2 cup breadcrumbs, dried (I used Panko Japanese bread crumbs)

I have tried many more-complicated recipes for macaroni and cheese. Not only is this one often requested for family functions, but it is easy to make! Kids LOVE this recipe. It is so handy for busy moms.

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
  • Place a saucepan over medium-low heat. Combine the cheese food, milk, and pepper in the saucepan; cook until the cheese has melted, stirring frequently. Stir in the drained macaroni until evenly coated.
