- Preheat the oven to 425 degrees F (220 degrees C).
- Spray a 9x13-inch casserole dish with cooking spray.
- Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
- Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
- Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
- Gently mix salt and cooked macaroni into the sauce and stir to combine.
- Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
- Bake in the preheated oven until casserole is bubbling, about 20 minutes.

UNBELIEVABLY DELICIOUS MACARONI PIE
This is a dish from my childhood that has taken me years to recreate. I think I've finally done it. I can't go to family dinners without it! In Jamaica, we use Scotch Bonnet peppers but you can use as much or as little hot peppers as you like. Feel free to vary the combination of seasonings until you find the combination that makes your taste buds dance. You can also cut the pie into little squares and serve them on toothpicks as an appetizer. And the best thing? It freezes very well and tastes even better as leftovers!

- Cook the macaroni in salted water until it is well done but not soggy.
- Drain well.
- Meanwhile, place the onion, garlic, escallion, green pepper and hot pepper in a blender with a little of the milk and puree.
- Set aside.
- Take out 1 cup of the grated cheese and mix with the breadcrumbs.
- Set aside.
- Grease a 10"x6" casserole dish with a little bit of the butter.
- Heat oven to 350 degrees F.
- Mix the hot macaroni with the butter until all the butter is melted.
- Add the remaining cheese and all of the seasoning mixture and mix until the melted cheese begins to form a sauce.
- Once everything is well incorporated, add the egg and mix well.
- Pour mixture into the prepared baking dish and top with breadcrumb/cheese mixture.
- Pour remaining evaporated milk slowly over the top of the mixture, taking care not to let the dish overflow.
- Let stand for about 15 mins so that the milk is absorbed.
- Bake for about 30 mins or until the top is brown and crusty and the milk has been absorbed.
- Let stand for another 15 minutes before serving.

- Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.

- Preheat the oven to 350 degrees F.
- Cook the macaroni until still slightly firm. Drain and set aside.
- In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
- Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
- Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
- Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
- In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
- Use a fork to crumble the gorgonzola.
- Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.
SOUTHERN MACARONI PIE
This recipe was given to me by my niece who resides in South Carolina. It is different than Baked Macaroni and Cheese recipes. I use this as a side dish to baked or fried chicken, baked pork chops, kielbasa, or just about anything. It is an alternate to having the traditional potatoes at most meals. You will find this recipe is quick to put together and calls for a minimal number of ingredients. Leftovers can be reheated in a microwave.

- Cook macaroni in salted water until almost done.
- Beat egg and flour with fork until there are no lumps.
- Beat in milk and salt.
- In a greased 2 quart shallow casserole dish, layer the macaroni, cheese, another layer of macaroni, and a final layer of cheese.
- Pour the milk mixture over the top of layered ingredients.
- Bake uncovered 45 to 55 minutes in a 350 degree Fahrenheit preheated oven.
- Remove from oven and let sit for 15 minutes before serving.
- This last step is important to let the pie set-up.

- Heat oven to 350 degrees. Grease a 9-by-13-inch (3-quart) baking dish with butter.
- In a large bowl, mix the Cheddar and mozzarella, and set aside. In a small bowl, whisk the evaporated milk, egg, tomato paste, garlic and onion powders, mustard, thyme, Scotch bonnet pepper, 1 teaspoon salt, and a generous pinch of black pepper until very well blended.
- Cook macaroni in boiling salted water according to the package directions for al dente. Drain and return to the pot. Stir in the tablespoon of butter until melted, then add half the cheese and stir until it's fully combined and starting to melt. Stir in the milk mixture until the pasta is evenly coated. Pour the pasta into the buttered dish, spread it evenly and sprinkle the rest of the cheese on top.
- Bake until the top is bubbling and golden brown, 35 to 40 minutes.
- Remove from the oven and let rest for at least 10 minutes to help it firm up. The dish can be made up to a day in advance, tightly covered with foil or plastic wrap, and refrigerated, or cut into serving sizes, wrapped tightly and frozen. Reheat covered with foil in a 350-degree oven or in a covered skillet on the stove.

- Peel the eggplants, and slice them lengthwise 1/4-inch-thick. Sprinkle with salt, and place in a colander to drain for 30 minutes.
- Meanwhile, lightly butter a 10-inch springform pan with 1 tablespoon butter. Coat evenly with the breadcrumbs; set aside.
- Using paper towels, dry the eggplant slices. Heat 1/2-inch oil (half vegetable, half olive) in a large skillet over medium-high heat. Working in batches, add eggplant, and cook until lightly golden on both sides. Drain on a paper towel-lined baking sheet. Line the bottom and sides of the prepared pan with eggplant slices, slightly overlapping them and letting them overhang the sides of the pan; set aside.
- Preheat the oven to 350 degrees. Bring a large pot of water to a boil. Add salt and pasta, and cook for 4 minutes. Drain, and transfer to a large bowl.
- Stir the tomato sauce, half of the Parmesan and Pecorino, and the oregano into the pasta. Spoon half of the pasta into the lined pan. Top with caciocavalo cheese, remaining 3 tablespoons each Parmesan and Pecorino, and basil, then the remaining pasta. Fold the overhanging slices of eggplant over the pasta, and cover completely with remaining eggplant slices.
- Dot with the remaining 2 tablespoons butter. Bake until the top is golden brown, about 30 minutes.
- Remove from oven, place a platter on top, and invert. Let stand for 10 minutes before unmolding. Remove the sides and bottom of the pan. Serve with remaining cup of sauce on the side.
MACARONS
Macaron is the French word for macaroon, but are never the coconut-based cookie. Macarons are one of the most amazing pastries, with hundreds of flavors and fillings. Macarons are made from almond flour and meringue, with even the pros claiming to failure on a regular basis. After going through dozens of recipes and trials, this is the most reliable macaron recipe I could come up with. You could get lighter using the Italian meringue method, but it's less dependable.

- Place egg whites into a metal mixing bowl and refrigerate overnight. The next day, bring egg whites to room temperature.
- Preheat oven to 280 degrees F (138 degrees C). Line baking sheets with parchment paper.
- Whisk confectioners' sugar and almond flour in a bowl. Beat the egg whites with salt in metal bowl with an electric mixer on medium speed until foamy, about 1 minute; increase speed to high and gradually beat in superfine sugar, about 1 tablespoon at a time, until the egg whites are glossy and hold stiff peaks, 3 to 5 more minutes.
- Gently fold almond flour mixture into whipped egg whites until thoroughly incorporated; spoon meringue into a pastry big fitted with a 3/8-inch tip.
- Pipe 1-inch disks of meringue onto the prepared baking sheets, leaving 2 inches of space between cookies. The batter will spread. Lift the baking sheets a few inches above the work surface and hit them lightly on the work surface several times to remove any air bubbles from the cookies. Let the cookies stand at room temperature until the shiny surfaces become dull and a thin skin forms, about 15 minutes.
- Place the baking sheets in the preheated oven and bake with the oven door open slightly until the macarons' surfaces are completely dry, about 15 minutes. Let cookies cool completely on a baking sheet before peeling parchment paper from the cookies.
- Spread half the cookies with any desired filling, top with remaining cookies to make sandwiches, and refrigerate at least 2 hours to overnight to let the cookies soften.

- Heat the oven to 200C/180C fan/gas 6. Spread the baguette chunks over a baking sheet, drizzle with the melted butter and season. Bake for 6 mins until crisp, then set aside.
