MAKE-AHEAD BURRITOS
We have two children who keep us busy, so I love meals I can just pull out of the freezer. The burritos are wrapped individually so it's easy to take out only the number you need. I serve them with canned refried beans and Spanish rice from a boxed mix. -Jennifer Shafer, Durham, North Carolina.

- In a large skillet, combine the meat, salsa, beans, chilies, seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through., Spoon about 1/3 cup off-center on each tortilla; top with a cheese strip. Fold edge of tortilla nearest filling over to cover. Fold ends of tortilla over filling and roll up. Wrap individually in aluminum foil. Freeze for up to 2 months., To use frozen burritos: Place foil packets on a baking sheet. Bake at 350° for 50 minutes or until heated through. If thawed, bake for 25-30 minutes.

MAKE-AHEAD BEEF AND BEAN BURRITOS
These easy, homemade burritos are freezer-friendly and can be reheated in the microwave. Just a little bit of prep work yields a batch of the best grab-and-go burritos you'll ever have!

- In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.
- Heat beans as directed on can. In small bowl, add hot rice, lime juice and cilantro. Stir to combine.
- Heat tortillas as directed on package. Spread 2 tablespoons of the beans in middle of each tortilla, leaving 1-inch border around edges. Sprinkle 2 tablespoons cheese over beans. Spoon 1/4 cup beef mixture and 2 tablespoons rice mixture evenly down center of each. Fold bottom of each tortilla 1 inch over filling. Fold sides in, overlapping to enclose filling. Fold top over sides.
- To freeze: Wrap each burrito in foil. Label 1-gallon resealable freezer plastic bag. Transfer burritos in single layer to bag; remove as much air as possible, and freeze up to 1 month. To heat: Remove 1 burrito from foil, and wrap in lightly dampened paper towel. Place on microwavable plate; microwave uncovered on High 3 minutes to 4 minutes 30 seconds, turning once, until heated through (at least 165°F).

- In a Dutch oven over medium heat, brown roast in oil; drain. Add water, onion, garlic, oregano, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 2 to 2-1/2 hours or until meat is tender. Remove roasts; cool. , Remove meat from bone and cut into bite-size pieces. Skim fat from pan juices. - Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

- Preheat oven to 425 degrees F (220 degrees C). Spread sweet potatoes on a baking sheet and drizzle with 1 tablespoon olive oil. Season well with salt and pepper and toss to coat.
- Roast sweet potatoes until tender and browned, 15 to 20 minutes. Let cool to room temperature.
- Heat remaining olive oil in a large skillet over medium-low heat. Whisk eggs and milk together in a medium bowl and season with salt and pepper. Pour eggs into pan and cook, stirring frequently with a rubber spatula, until they begin to set, about 2 to 3 minutes. Sprinkle cheese over eggs and continue to cook, stirring frequently, until eggs are no longer runny, 3 minutes more. Remove from heat and let cool to room temperature.
- Wrap tortillas in a dish cloth and microwave for 30 seconds to 1 minute, until pliable. To assemble each burrito: Spread about ¼ cup sweet potatoes, ⅓ cup scrambled eggs, ¼ cup black beans and 2 tablespoons chorizo in a horizontal line across the middle of the tortilla, leaving about 2 inches on either side. Drizzle with 1 to 2 tablespoons salsa verde. Fold left and right sides over the filling, then tightly roll from the bottom of the tortilla to form a burrito. Tightly wrap in plastic wrap or aluminum foil. Repeat with remaining tortillas, and freeze for up to 1 month. Alternatively, refrigerate for up to three days.
- To serve: Remove burrito from plastic or foil and place on a plate in the microwave. Microwave on high for 4 to 5 minutes, until filling is hot and tortilla is tender. Serve immediately with your choice of hot sauce or salsa. If reheating from the refrigerator, microwave on high for 1 ½ to 2 minutes.

- 1. Brown ground beef in skillet, remove meat and drain off fat. Add 1 Tbsp. canola or olive oil to the pan, add diced pepper, onion, celery, and sautee' until onion and celery have softened. Add previously cooked ground beef back into the pan, stir to combine with veggies.
- 2. Add Burrito Seasoning, Rotel tomatoes, garlic powder, oregano, ground cumin, cilantro, and salt and pepper to taste; simmer on low for 5 minutes. Add diced raw potato (or cooked rice if you prefer), continue simmering for another 15 minutes (you want the potatoes 'done' but not 'mushy'). Remove from heat, stir in drained, sliced black olives if desired.
- 3. Place butter in skillet along with refried beans and mash together butter and beans and mashing any leftover whole beans. Cook on medium until bubbling. When meat and beans are done, you are ready to assemble burritos.
- 4. Heat each tortilla in a skillet (I use an iron skillet) with just a bit of non-stick spray (Pam), continue heating each tortilla and place on a covered plate. Alternate method: place one burrito shell on a plate and put in the microwave oven for 20 seconds, remove from microwave. Fill as follows:
- 5. Place a line of heated refried beans down the center of the tortilla. Add some shredded cheese to the line of beans. Then place beef mixture on top of the cheese. Fold the tortilla over and roll it to form the burrito. Repeat until all beef and beans are gone.
- 6. Wrap each burrito in Saran Wrap or aluminum foil, put them in a zip-lock freezer bag, and freeze them.
- 7. For a quick meal, take one or more out, unwrap, place on a microwave safe plate, and cover. Microwave for 6 minutes (or until hot thru). Eat plain, or garnish with grated cheese, shredded lettuce, diced tomato, and salsa. This way you can enjoy a burrito any time you want one.
