STEVE'S MAPLE-GLAZED SPIRAL HAM RECIPE

The perfect holiday spiral ham! I meshed the best of multiple glazed ham recipes to come up with this sweet and savory ham recipe with a hint of holiday spice.

Steve's Maple-Glazed Spiral Ham Recipe image

Steps:

  • Place ham in a roasting pan and allow it to rest at room temperature for 30 to 45 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Mix apple cider, orange juice, and vinegar together in a bowl.
  • Open the spirals of the ham to reveal more of the meat's surface area. Pour the juice mixture over the ham. Cover with aluminum foil.
  • Bake in the preheated oven until heated through, about 45 minutes.
  • Whisk maple syrup, dark brown sugar, white sugar, mustard, soy sauce, cinnamon, ginger, nutmeg, red pepper flakes, and cloves together in a saucepan over medium heat until shimmering and smooth, about 2 minutes. Simmer 2 minutes more; remove glaze from heat to cool a bit.
  • Increase oven temperature to 400 degrees F (200 degrees C).
  • Remove aluminum foil from heated ham. Brush 1/3 the glaze atop the ham to cover it completely.
  • Return ham to the hot oven. Bake, uncovered, about 8 minutes. Repeat adding glaze and baking for 8 minutes more.
  • Remove ham and baste a third time with remaining 1/3 glaze. Continue baking until glaze is caramelized and bubbly, 10 to 12 minutes. Remove from the oven and let rest 10 to 15 minutes before slicing. Drizzle pan juices on top.

Steps:

  • Remove ham from packaging and discard plastic disk covering bone. Place ham in oven bag. Tie closed and cut 4 2" slits in top of bag. Transfer bagged ham to large roasting pan and let stand at room temp for 1 1/2 hours.
  • Adjust oven rack to lowest position and heat oven to 300 degrees. Bake ham until internal temp reaches 100 degrees, 1 1/2- 2 1/2 hours.
  • Meanwhile, bring apple jelly, 1/2 c brown sugar, syrup, mustard, cinnamon, and nutmeg to boil in saucepan. Reduce heat to low and simmer, stirring often, until mixture is very thick and reduced to 1/3 cup, about 45 minutes. Remove cinnamon pieces; off heat whisk in butter.
  • Combine remaining brown sugar and dry mustard in small bowl. Remove ham from oven and let cool 5 minute Increase oven temp to 400 degrees. Cut open oven bag and roll back. Using a pastry brush, paint ham with glaze. Carefully press sugar mixture onto exterior of ham with hands. Return to oven and bake until dark brown and caramelized, about 20 minute Transfer ham to cutting board, loosely tent with foil, and let rest 15 minute
  • TO CARVE: With ham on its side, cut around the bone with a paring knife to free the attached slices. Switch to a carving knife and slice horizontally above the bone to remove the entire section. Turn ham to cut side down and slice down along the bone to remove the remaining meat. Carefully cut between the slices to separate them.
  • TO MAKE A PEACH GLAZED HAM: Replace apple jelly with 12 oz peach preserves, dark brown sugar with 3/4 c light brown sugar, and maple syrup with peach schnapps. Omit whole grain mustard, cinnamon, and nutmeg, and add 1/8 t cayenne to glaze. Sub additional 1/8 t cayenne for dry mustard to sugar coating.

Crock Pot Maple Ham image

Steps:

  • Put ham into crock pot (make sure it fits!) Put syrup, applesauce and cinnamon into a measuring cup and whisk them together to form a glaze.
  • Pour the glaze over the ham in the crock pot.
  • Turn the crock pot on high for 1 hour to seal in heat.
  • Turn down to low after first hour and cook for 4 more hours.
  • When done take out, slice and enjoy!

  • Remove ham from packaging and enclose, cut side down, securely in a large piece of heavy duty foil. Close the foil so that it will open from the top. Place on a rack in a large roasting pan. Pour about 1-inch of water into the bottom of the roasting pan and place the pan in the preheated oven. Bake for 10 minutes per pound until heated through. For a 7 to 9 pound ham the cooking time will range from 70 to 90 minutes. Check periodically and add more water to pan if it cooks off.
  • Meanwhile, whisk together glaze ingredients in a saucepan over medium heat. Allow to simmer for a couple of minutes, then remove from the heat and set aside.
  • After cooking time, remove pan from oven and increase oven temperature to 400 degrees F. Open foil to expose ham and pour glaze evenly over the top.
