MAPLE & BLUE CHEESE STEAK
This is a wonderful, cheesy recipe that melts in your mouth. I love this traditional Canadian meal. It certainly has a special feel; the sauce is a fantastic complement to steak. -Susan Jerrott, Bedford, Nova Scotia

- In a small bowl, combine the vinegar, 5 tablespoons maple syrup, mustard and thyme. Pour 2/3 cup marinade into a shallow dish; add the steak and turn to coat. Cover and refrigerate for up to 3 hours. Cover and refrigerate remaining marinade. , Meanwhile, in a small skillet, saute pecans in oil until toasted. Stir in remaining maple syrup. Bring to a boil; cook for 1 minute, stirring constantly. Remove from skillet and spread onto waxed paper to cool completely., Drain and discard marinade. Sprinkle steak with salt and pepper. Grill, over medium heat, for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing., Place reserved marinade in small saucepan. Bring to a boil; cook until liquid is reduced to 1/4 cup, about 2 minutes. Divide steak slices between two plates. Drizzle with sauce; sprinkle with blue cheese and pecans.

MAPLE SYRUP MARINADE
Steps:
- To the maple syrup bottle (or a glass bottle with a lid), add the syrup, shallot, vinegar, mustard, rosemary, garlic and pepper. Cover and shake vigorously to combine. Add the oil, cover and shake vigorously again to combine. Season with the salt.
- Use as a marinade for pork chops or chicken.
MAPLE MARINATED STEAK
We love this steak, often we cube the steak and grill it on skewers. This should marinate at least 8 hours.

Steps:
- Place steak in a shallow dish. Mix remaining ingredients together and pour over steak. Cover and refrigerate 8 hours to overnight.
- Remove steak from marinade and grill to desired doneness.
- Heat marinade in saucepan over medium heat to boiling.
- Cut steaks into very thin slices, cutting across the grain. Place in a large dish covered with the heated marinade.

Steps:
- Blend soy sauce, vinegar, syrup, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Toss steaks with mixture. Marinate at room temperature about 15 minutes.
- Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see grilling procedure.
- Discard marinade and pat steaks dry.
- Oil grill rack, then grill steaks, covered only if using a gas grill, turning occasionally, 6 to 8 minutes total for medium-rare. Let rest on a plate, uncovered, 10 minutes.
MAPLE BBQ SALMON STEAKS
I ran out of salmon marinade one day and threw maple syrup and BBQ sauce together to come up with this recipe. It's great served with potatoes or acorn squash!

Steps:
- Combine BBQ sauce, maple syrup, Dijon mustard, and garlic in a large resealable plastic bag. Add salmon steaks and marinate for at least 45 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Place salmon on the baking sheet. Drizzle marinade over salmon.
- Bake in the preheated oven, turning halfway through, until salmon flakes easily with a fork, about 20 minutes.
