- Heat and stir orange juice and cranberries in small saucepan on medium heat until just boiling. Remove from heat. Let stand for about 30 minuntes until cooled to room temperature.
- Combine next 4 ingredients in large bowl. Make a well in centre.
- Beat butter and brown sugar in medium bowl until light and creamy. Add eggs, 1 at a time, beating well after each addition.
- Add pumpkin and first amount of maple syrup. Beat until smooth. Add to well. Add orange juice mixture. Stir utnil just moistened. Line bottom and sides of lightly greased 9x5x3 inch loaf pan with parchment paper(not waxed), leaving 1 1/2 inch overhang on each side. Spoon batter into pan. Spread evenly. Bake in 350 degree oven for 70 -75 minutes until wooden toothpick inserted comes out clean. Remove pan to wire rack. Run knife around loaf to loosen. Do not remove from pan.
- Boil second amount of maple syrup in small heavy saucepan on medium for 3-5 min until lightly reduced and thickened. Carefully pour hot syrup evenly over loaf. Immediately sprinkle with toasted pecans. Let stand in pan on wire rack for 30 minute Lift loaf from pan using parchment paper edges and handles. Set on wire rack to cool completely, disgarding parchment paper. Cuts into 16 pieces.

- Preheat the oven to 350 degrees F. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan.
- Put the butter in a small skillet over medium-low heat. Melt the butter and let simmer until the butter browns (you'll see tiny tan/light brown specks at the bottom of the skillet and the butter will smell nutty), 5 to 8 minutes. Remove from the heat and let cool completely.
- Combine the brown butter, pumpkin, brown sugar, maple syrup, vanilla and eggs in a large bowl. Whisk until smooth. Whisk together the all-purpose flour, whole wheat flour, baking powder, pumpkin pie spice, salt and baking soda in a separate bowl. Add to the wet ingredients and whisk until smooth (but don't overmix). Scrape into the prepared loaf pan and smooth the top. Press the cranberries into the top and sprinkle evenly with the turbinado sugar.
- Bake until the top is browned and crusty and a tester inserted in the center comes out clean, 50 to 55 minutes. Cool on a rack for 15 minutes, then unmold and cool completely.

- Zest the entire orange, avoiding the white (pith). Peel and section the orange and remove all seeds. Chop orange pulp in the bowl of a food processor or blender until fine. Reserve with the zest.

- Beat cheese, butter, brown sugar and eggs to gether on electric mixer until light and creamy.
- Combine next 6 dry ingredients.
- Stir into creamed mixture alternately with pumpkin.
- Mix well, Stir in orange rind, raisins and nuts.
- Spread in greased 9 inch x 5 inch loaf pan.

LOAF PAN ANGEL FOOD CAKE
Angel food cake is usually one of those fussy cakes I prefer to avoid. Anything that requires special pans and beating and sifting or other steps beyond "dump ingredients into a bowl" is generally more than I want to bother with. For this easy version, I simplified the process and ended up with two heavenly loaves: one to photograph and share, and another to eat all by myself.

- Position a rack in the bottom of the oven and preheat to 350 degrees F. Line two 9-by-5-inch loaf pans with aluminum foil, allowing the foil to hang over the long sides by at least 1 inch. Do not grease the pans.
- Whisk together the flour and salt in a medium bowl. Set aside.
- Whisk the egg whites in a stand mixer fitted with the whisk attachment at medium speed just until they start to look foamy, for 30 seconds. Add the lemon juice and cream of tartar and beat on high speed until soft peaks form, 2 to 3 minutes.
- Gradually add the sugar in a slow, steady stream and beat until thickened and shiny, about 2 to 3 minutes.
- Add the orange extract and vanilla bean seeds, then decrease to the lowest speed. Add the flour and salt mixture in a steady stream and beat until just combined.
- Turn off the mixer as soon as all the flour is added. Fold the mixture with a rubber spatula once or twice to make sure the flour is fully incorporated. Divide the mixture evenly between the two prepared pans.
- Bake on the bottom rack of the oven until puffed and slightly golden brown on top, 25 to 30 minutes. Cool the cakes upside down by balancing the edges of each pan on two cans or jars, 15 to 20 minutes. Once completely cooled, remove the cakes from the pan, peel off the foil and serve.

- Cut top from pumpkin in a zig zag design.
- Remove seeds and stringy insides.
- Place pumpkin in a baking pan; add about 1 inch of hot water.
- Cover pumpkin and pan with foil.
- Bake at 400 degrees F. for 45 minutes. (Or microwave for about 14 minutes.).
- Season inside of pumpkin with salt and pepper; brush with honey mustard (or yellow mustard and sprinkle with brown sugar).
- Combine egg, Worcestershire sauce, 1/2 teaspoon seasoned salt, ground beef and bread crumbs; mix well.
- Spoon into pumpkin shell, packing down lightly.

- You may cook the "lid" of the pumpkin along with the meatloaf, however, watch it and remove when it is cooked and still looks attractive.

- Set oven to 325 degrees.
- Grease two 8x4-in loaf pans, or use mini loaf pans if desired.
- In a med bowl, combine all filling ingredients until smooth; set aside.
- In another bowl, sift 1-2/3 cup flour, baking soda, salt, cinnamon, cloves, ginger and nutmeg; set aside.
