Add buttermilk mixture to flour mixture and stir just until batter is combined.
  • Brush waffle iron with butter and pour in 1/2 to 3/4 cup batter, leaving a 1/2-inch border on all sides. Close iron and cook until waffles are golden brown, 2 to 4 minutes. Transfer waffles to rack in oven to keep warm; repeat with remaining batter. Serve with bananas and maple syrup.

Pumpkin Waffles with Maple Walnut Apples image

Steps:

  • For the waffles: Preheat a waffle iron to medium heat.
  • Whisk the flour, wheat germ, sugar, baking powder, spice, nutmeg and salt together in a large bowl.
  • Beat together the milk, pumpkin, melted butter, and melted shortening, egg and egg white, in a large measuring cup. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk together to make a slightly lumpy batter.
  • For the topping: Melt the butter in a skillet over medium heat. Add the apples and let cook until slightly browned, but still crisp, about 4 minutes. Add the maple syrup and walnuts and toss to coat.
  • Pour and spread about 1 cup batter into the waffle iron. Cover and cook until crisp and a rich golden brown, about 7 minutes. (Try to resist the temptation to open the waffle iron too soon. Steam will puff out of the iron while the waffles cook, when this stops the waffle is cooked.) Repeat with the remaining batter. Serve hot with the apples.

1 cup cake flour
1/4 cup wheat germ
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
3/4 cup milk
1/2 cup pumpkin puree
1/4 cup melted butter
1/4 cup melted shortening (transfat-free)
1 large egg
1 large egg white
2 to 3 tablespoons unsalted butter
2 crisp apples, peeled and sliced thinly
1/4 cup pure maple syrup
1/2 cup toasted walnuts (see Cook's Note)

  • Preheat oven to 400 degrees F (200 degrees C). Grease and flour the bottom of a 15x20-inch rimmed baking sheet or jelly roll pan, or line it with parchment paper.
  • Sift white sugar and flour together in a bowl.
  • Combine hot water, creamy peanut butter, and 1/2 cup butter in a saucepan; bring to a boil, stirring frequently. Remove from heat.
  • Blend yogurt, eggs, and baking soda together in a bowl. Pour peanut butter mixture into egg mixture in a steady stream, stirring constantly. Mix flour mixture into peanut butter mixture until batter is combined. Spread batter into prepared baking sheet.
  • Bake in preheated oven until the center of the cake springs back when touched lightly with a fingertip, about 20 minutes. Cool on wire rack.
  • Combine chunky peanut butter, 1/2 cup butter, and 6 tablespoons milk in a small saucepan; bring to a boil, stirring constantly. Reduce heat to low; stir in confectioners' sugar and maple syrup until sugar dissolves and frosting is smooth. Pour warm frosting over warm cake. Sprinkle walnuts, pecans, and almonds over the top; cool completely.
  • Stir cream cheese, 1/2 cup confectioners' sugar, and 1 tablespoon milk together in a bowl until smooth; add almond extract. Fold whipped topping into cream cheese mixture until frosting is creamy and runny. Drizzle cream cheese frosting over the top of cooled cake.

PEANUT BUTTER WAFFLES

Found in my TOH Simple & Delicious magazine and fell in love immediately. I served with warmed mixed jelly - that way it was more syrupy than jellied. It is great with just some butter spread on it and fresh fruit too. Hope you like them too. I have put the serving as 2 waffles so this creates 5 servings (10 waffles total)

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and cinnamon.
  • In another bowl, separate egg yolks into bowl (keep egg whites in another small bowl). Whisk egg yolks, milk, peanut butter and butter.
  • Stir egg yolk mixture into dry ingredients just until moistened.
  • In the small bowl with the egg whites, beat the egg whites until stiff peaks form. Fold the egg whites into the batter.
  • Bake waffles in a preheated waffle iron that has been sprayed lightly with cooking spray. Use the temperature setting to get the end results you prefer in your waffles - we like ours just golden brown but hubby likes his a bit more cooked so it is crispier.
  • Serve with heated jelly (so it is more like a syrup), or use a fruit flavored syrup, or just serve with fresh fruit and yogurt.

1 1/4 cups flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 eggs, separated
1 1/4 cups milk (I used 1% milk)
1/3 cup peanut butter, creamy
3 tablespoons butter, melted
