MEAT MARINADE

This meat marinade has got to be the easiest, best tasting thing I've ever done to inexpensive cuts of beef, pork, or venison. As a newlywed, we cut all corners, but thanks to this recipe, not on taste!

Steps:

  • Use a flat container large enough to hold meat in a single layer. Combine oil, soy sauce, Worcestershire sauce, mustard and lemon juice. Season with garlic powder, onion powder, salt and pepper. Place meat in the marinade and turn to coat both sides.
  • Cover and refrigerate for at least 2 hours, shaking or turning meat occasionally.

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

FAST, EASY AND DELICIOUS MARINADE FOR ALL TYPES OF MEAT

I found the original form of this recipe when looking for a great fajita marinade. It was so incredibly delicious that I started using variations of it on all my grilled meats. It's incredibly fast, and doesn't have a strong flavor of its own. It just seems to make all meat taste juicier, better and more like itself. Any high-acid citrus works well in this recipe, so substitute lemons if you don't have limes. I haven't tried grapefruit yet, but I'm sure it would be interesting. I've also augmented with rice or cider vinegar when my citrus has been a bit dry and that has worked well too. Nothing in this recipe is too exact, and you don't have to be either. The basic combination is just so incredible (and forgiving!), I highly recommend it.

Fast, Easy and Delicious Marinade for All Types of Meat image

Steps:

  • For skirt steak: Mix salt and lime juice together.
  • Rub marinade on both sides of steak and marinate at room temperature for about 10 minutes, turning once.
  • Shake excess marinade off steak, then rub with pepper.
  • Grill steak on lightly oiled grill rack, turning once, 6 to 10 minutes total for medium-rare.
  • Transfer to cutting board, then let stand 5 minutes before cutting diagonally into thin slices.
  • For chicken: Wash and dry chicken parts, then put in ziplock bag or bowl.
  • Whisk all marinade ingredients together and pour over chicken.
  • Let marinate at room temperature 10-30 minutes.
  • Grill about 5 minutes on each side, turning once, over medium flame until fully cooked.
  • For pork chops: Wash and dry pork chops, then put in ziplock bag or bowl.
