SMOKED SALMON & POPPY SEED PALMIERS

These savoury pastries are sure to please at a posh picnic, with cream cheese, smoked fish and puff pastry

Smoked salmon & poppy seed palmiers image

Steps:

  • Unroll the pastry and brush one side all over with the beaten egg. Sprinkle over the poppy seeds, then flip over the pastry. Spread the cream cheese over the pastry and top with the smoked salmon, then scatter over the chives. With one of the longer sides facing you, mark a line roughly down the centre, but don't cut all the way through. Tightly roll each end in towards the middle until you reach the centre. Slice into 1cm-thick pieces and place, cut-side up, on a baking tray lined with baking parchment. Chill until ready to bake, or freeze for up to 2 months.
  • Heat oven to 200C/180C fan/gas 6. Bake for 20-25 mins until puffed up and golden brown (if baking from frozen, cook for an extra 5 mins). Leave to cool on a wire rack before packing for your picnic.

Steps:

  • Wash the salmon fillets thoroughly and place in a pan. In a large bowl, combine soy sauce, olive oil, garlic, ginger, and sugar and mix well. Pour the marinade over the fillets. Refrigerate for 4 to 6 hours.
  • Preheat a smoker to 250 degrees F with hickory chips.
  • Place salmon on the smoker. Smoke for 60 to 90 minutes, or until fish flakes nicely.
  • Serve with freshly squeezed lemon just before serving.

2 salmon fillets with skin*
1 cup soy sauce
1/2 cup olive oil
8 to 10 cloves garlic, finely chopped
1 (3-inch) piece ginger, finely chopped
2 tablespoons white sugar
1 lemon, quartered

Salmon With Poppy Seed Sauce image

Steps:

  • Turn oven on to 350.
  • Season Salmon Steaks wih garlic powder and seasoned salt.
  • Cover and put in oven for about 25 minutes. Remove from oven and pour Poppy Seed Dressing over the Salmon and place back in the over for abaout 5-10 minutes. Remove from oven and let cool for about 2 minutes.
  • This goes good with steamed rice and or yellow rice with any veggie.

2 lbs salmon steaks
1 tablespoon garlic powder
1 tablespoon seasoning salt
1 cup poppy seed salad dressing

Chilled Penne with Asparagus, Smoked Salmon and Poppy Seeds image

Steps:

  • Whisk first 6 ingredients in medium bowl. Season with salt and pepper.
  • Cook pasta in large pot of boiling salted water until almost tender but still firm to bite. Add asparagus and cook until crisp-tender, about 2 minutes longer. Drain, reserving 1/4 cup cooking liquid. Rinse with cold water until cold. Drain well. Transfer pasta and asparagus to large bowl. Add green onions and smoked salmon. Mix reserved cooking liquid into dressing. Add to salad; toss to blend. Season with salt and pepper. Chill at least 1 hour and up to 6 hours.
