Steps:

  • Cook pasta in boiling water to package directions Add olive oil to pan over medium high heat. Add shrimp and begin sauteing until lightly pink. Season with salt. Once the shrimp has been cooking for a couple minutes add the minced garlic, butter, parsley and red pepper flakes, to taste. Deglaze the pan with white wine and continue cooking. Cook until shrimp is pink and cooked through. Once pasta is cooked remove from pot and add to shrimp pan. Toss until the pasta is evenly coated. Add lemon zest and mix. To serve, plate scampi and drizzle with a little olive oil and a sprinkle of red pepper flakes. Enjoy! .

1 dozen 16-20 shrimp
1 box linguine
2 tablespoons olive oil (plus extra for garnish)
2 cloves garlic (minced)
Zest of 1/2 a lemon
1/2 cup white wine
2 tablespoons butter
1 tablespoon parsley (finely chopped)

  • Combine curry paste, fish sauce, sambal and chili sauce in a medium bowl; add shrimp, tossing to coat. Place a large nonstick skillet over medium-high heat until hot. Add oil, and heat till smoking then add the shrimp mixture, and sauté for 2 minutes. Add scallions; cover, and cook for 3 minutes. Stir in sweet soy sauce and coconut milk. Cook for 3 minutes or until thoroughly heated and the shrimp is cooked through. Add cilantro and serve. COOKING NOTES

Steps:

  • Toss the shrimp in a medium bowl with 1 teaspoon of salt and red pepper flakes. Heat the 3 tablespoons oil in a heavy large skillet over medium-high heat. Add the shrimp and saute for about a minute, toss, and continue cooking until just cooked through, about 1 to 2 minutes. Transfer the shrimp to a large plate; set aside. Add the onion to the same skillet, adding 1 to 2 teaspoons of olive oil to the pan, if necessary, and saute until translucent, about 5 minutes. Add the tomatoes with their juices, wine, garlic, and oregano. Simmer until the sauce thickens slightly, about 10 minutes. Return the shrimp and any accumulated juices to the tomato mixture; toss to coat, and cook for about a minute so the flavors meld together. Stir in the parsley and basil. Season with more salt, to taste, and serve.

Steps:

  • Bring 6 quarts of water to a boil in a large pot, and add 3 tablespoons kosher salt.
  • Meanwhile, put 4 tablespoons olive oil in a large sauté pan over medium heat, and then add the tomato paste and pepper flakes; reduce the heat to low and stir just until fragrant, about 4 minutes. Stir in the tomatoes, and remove from the heat.
  • Drop the pasta into the boiling water, and cook until al dente. Drain the pasta, reserving 1/4 cup of the pasta water.
  • Add the pasta and the reserved pasta water to the tomato sauce, stir and toss over medium heat until the pasta is well coated. Season with salt if necessary, then add the remaining oil, tossing well. Serve immediately, with grated Parmigiano-Reggiano on the side.

Steps:

  • 1. Put the orange juice, cilantro, chili paste, olive oil, garlic, scallion, chipotle, and salt in a blender or food processor fitted with the metal blade and blend until smooth.
  • 2. Place the shrimp in a resealable freezer bag and pour the orange juice mixture over the shrimp. Chill in a refrigerator or ice-filled cooler for 2 to 3 hours but no longer.
  • 3. Remove the shrimp from the marinade and discard the marinade.
  • 4. Grill the shrimp over medium-high heat until they are opaque in the centers, 3 to 4 minutes per side.
