Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
  • Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
  • Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

  • In a large skillet heat oil over medium high heat. Add butter and stir until melted. Add potatoes and toss to coat. Cook the potatoes for 10 minutes, occasionally tossing and stirring them.   • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Toss French fries and oil together in a large bowl. Add 2 tablespoons seafood seasoning and toss to coat. Place on the prepared baking sheet.
  • Bake in the preheated oven until crispy, 35 to 45 minutes.
  • While fries are baking, make the cheese sauce by combining milk and seafood seasoning in a heavy-bottomed saucepan over low heat.   • Wash the whole potatoes.
  • Put the potatoes in a large dutch oven or another type of large vessel that you have filled with water.
  • Bring the water to a boil, lower heat slightly, and boil for 20 minutes, or until tender.
  • Remove the potatoes from the hot water and set aside until cool.
  • Peel the potatoes and cut each potato into four long pieces (the long way).
  • Heat the oil and fry the potatoes in batches, leaving enough room for easy turning.

Steps:

  • Fill a very large stockpot fitted with a basket insert with about 8 quarts of water, or about halfway full. Squeeze lemons into the water, tossing the halves in too. Add onions, chiles, thyme, garlic, 1 2/3 cup seafood seasoning, 6 teaspoons kosher salt, and bay leaves; bring to a boil over medium-high heat. Reduce heat and simmer for 10 minutes.
  • Stir potatoes into the pot and simmer for 15 to 20 minutes. Next, add the sausage and corn; cook another 5 minutes, making sure everything stays covered with the liquid. Add the clams and boil until they open, about 8 minutes. Toss in the shrimp and shut off the heat. Cover the pot and let the shrimp steep in the flavor for 10 minutes, adding the crab in the last 5 minutes (press them into the liquid).
