Steps:

  • Add the oil to a large saute pan with the garlic and red pepper flakes. Cook over medium heat until the garlic turns golden. Remove the garlic and discard. Add the chopped Swiss chard ribs and saute until soft, about 4 minutes. Add the Swiss chard leaves and season with salt, to taste. Cook until the leaves are wilted. Stir in a splash of red wine vinegar. Serve immediately.

  • Cook a 15.5-ounce can chickpeas (rinsed and patted dry) in olive oil in a skillet over high heat until crisp, 5 minutes; season with salt and pepper. Transfer to a bowl. Chop 1 pound Swiss chard. Cook the stems and 2 smashed garlic cloves in oil until soft. Add the chard leaves; cook until wilted. Stir in 4 teaspoons red curry paste and 2 tablespoons water; cook until dry, 2 to 4 minutes. BAKED SWISS CHARD WITH OLIVE OIL AND PARMESAN

A trendy veggie! Never knew this stuff was so good. The REAL secret is lots of Parmesan. The recipe is derived from two blogs: Kalyn's Kitchen blog and Up A Creek Without A PatL. I made a slight variation: First I cut the stems into smaller pieces and simmered them for about 5 minutes, then added the ripped leaves and simmered a minute or two longer, until everything felt somewhat tender. Then continued as per the directions. At the finish, the cheese is all melty with some chewy or crisp browned pieces. Yum.

Steps:

  • Rip leaves from stems and tear. Parboil or steam in salted water until fairly soft. Drain.
  • Spray a non-stick baking dish with olive oil.
  • Place chard in the pan and mist lightly with olive oil, then sprinkle with cheese. (If doubling the recipe, make two layers, misting each layer with oil and sprinkling with cheese.).
  • Bake about 20 minutes, or until chard is softened and cheese is slightly browned on the edges. Season with fresh ground black pepper if desired and serve hot.

Marmie's Version of Halibut Florentine image

Steps:

  • In large frying pan, melt 2 tablespoons butter and saute 4 crushed cloves garlic 4 minute
  • Add chard stems and cook 7 minutes untill a little tender.
  • Add chopped Chard leaves and simmer 5 - 8 min untill leaves are wilted, not cooked.
  • Remove from pan and set aside.
  • In same pan, melt 2 Tablespoons butter,
  • add 2 tbsp flour and mix till smooth.
  • Add 3/4 cup milk slowly and simmer to make rue.
  • Add 3 Tablespoons Parmesan to milk, stir.
  • Add 1/2 cup tex mex cheese and blend gently.
  • Place Chard in bottom of casserole dish.
  • Place Halibut on top of Chard.
  • Pour White sauce over halibut.
  • Bake 350 degrees F for 20 min.
  • Remove and sprinkle 1/2 cup tex mix over top.
  • Broil another 7 min or so untill nicely golden.

  • Tear Swiss chard leaves from thick white stalks and coarsely chop leaves, reserving stalks. In a large saucepan or kettle of boiling salted water simmer stalks until tender, 5 to 10 minutes, and drain in a colander. Chard may be prepared up to this point 1 day ahead, stalks cooled completely and leaves and stalks chilled separately in sealable plastic bags.
  • Mince garlic. In a large skillet heat oil over moderate heat until hot but not smoking and cook garlic, stirring, 30 seconds. Add leaves in 2 batches, tossing to coat with oil and stirring after each addition, and cook until leaves are wilted. Add stalks and cook, stirring occasionally, until heated through. Season chard with salt and pepper.

Squeeze excess moisture from chard leaves. Coarsely chop leaves.
  • Heat oil in heavy large skillet over medium heat. Add garlic and sauté until golden, about 2 minutes. Add chard stalks, ribs and leaves to skillet and sauté until liquid evaporates and mixture is heated through, about 5 minutes. Season with salt and pepper and serve.
