NACHOS SUPREMO

Serve this tasty snack at your game-day party or next casual gathering for a guaranteed crowd pleaser.

Nachos Supremo image

Steps:

  • Preheat oven to 400 degrees.
  • Season chicken with salt and pepper and wrap in parchment paper-lined foil; place on a rimmed baking sheet. Transfer to oven and bake until chicken is cooked through, about 1 hour.
  • Unwrap chicken; remove skin and discard. Remove chicken from bones and cut into small pieces; discard bones and set chicken aside.
  • Decrease oven temperature to 350 degrees. Layer one third of the chips on a large ovenproof platter or in a baking dish. Top with 1 cup cheddar and 1 cups of Monterey Jack. Repeat process twice with remaining chips and cheese. Transfer to oven and bake until cheese is melted, 5 to 10 minutes.
  • Remove from oven and top with reserved chicken, both salsas, cheese sauce, guacamole, sour cream, jalapenos, radishes, and cilantro; serve immediately.

4 bone-in, skin-on chicken breast halves
Coarse salt and freshly ground pepper
1 1/2 (16-ounce) bags tortilla chips
3 cups shredded cheddar cheese
3 cups shredded Monterey Jack cheese
Black Bean and Cherry Tomato Salsa, for serving

Steps:

  • Preheat oven to 350 degrees. Build six stacks on a rimmed baking sheet by alternately layering tortilla chips with your favorite toppings, such as black beans, salsa, sliced jalapeno chiles, and shredded cheese. Bake until cheese is melted and stacks are warm throughout, about six minutes. Garnish with sour cream (why hold back now?), and serve immediately.

Steps:

  • Preheat oven to 400 degrees. Top each chip with about 1 teaspoon beans and 1 1/2 teaspoons cheese; evenly divide chiles and olives among tortilla chips. Transfer to an ovenproof serving platter, forming layers; add chili sauce.
  • Bake until heated through and cheese melts, 3 to 5 minutes. Remove, and garnish with cilantro leaves. Serve immediately topped with tomatoes and sour cream, if desired.

1 cup refried beans
3/4 cup shredded Monterey Jack cheese

Nacho Cheese Sauce image

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion, jalapenos, cumin, chili powder, and cayenne pepper; cook, stirring, until onion is very soft, about 6 minutes. Add flour and cook, stirring, 1 to 2 minutes.
  • Slowly add cream and beer; cook, stirring, until thickened, about 5 minutes. Add both cheeses and tomatoes; cook, stirring, until melted and well combined.
  • Remove from heat and season with salt and pepper; serve immediately with nachos.

1/3 cup vegetable oil
2 1/2 cups minced red onion
4 jalapenos, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/3 cup all-purpose flour
2 cups heavy cream

Steps:

  • Preheat oven to 425 degrees, with rack in upper third.
  • Spread 5 cups chips in a 12-inch heavy-bottomed skillet (preferably cast iron). Top with 1 cup chili, then half the beans and 1 cup cheese. Layer with remaining 5 cups chips, 1 cup chili, remaining beans, and 1 cup cheese.
  • Bake until cheese is melted and bubbly, 5 to 7 minutes. Top with radishes, jalapenos, and cilantro; serve with sour cream, salsa, and avocado.

10 cups tortilla chips
2 cups Easy Beef Chili
1 can (15 ounces) drained and rinsed black beans
2 cups shredded cheddar cheese
Sliced radishes and jalapenos, and cilantro leaves, for topping

Kettle-Chip Nachos image

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment; spread chips out in a single layer. In a small saucepan, whisk together cream cheese and milk over medium heat until combined, 2 minutes. Whisk in blue cheese and 1/2 cup Gouda. Bring to a boil and cook, whisking constantly, until thickened, 5 minutes. Stir in 1/4 teaspoon salt, 1/8 teaspoon pepper, and hot sauce.
  • Drizzle cheese sauce evenly over chips, then sprinkle with remaining 1 cup Gouda. Bake until bubbly and crisp at edges, 5 to 7 minutes. Top with jalapeno, sour cream, and chives; serve.

1 bag (8 ounces) kettle potato chips, such as Cape Cod
2 ounces cream cheese
1/2 cup whole milk
1/2 cup crumbled blue cheese
