THE BEST BAKED BEANS

If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

1 large yellow onion, diced

1 teaspoon paprika
One 8-ounce can tomato sauce
1/3 cup molasses
1/4 cup bourbon
2 tablespoons packed light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through

Steps:

  • Preheat oven to 375 degrees. In a large skillet, cook bacon over medium high heat until almost crispy. Add onions and cook for another 5-6 minutes. Reserve 3 T. of bacon grease, pour off remaining grease. Set aside. In a large bowl mix all the beans, ketchup, sugars, vinegar & Worcestershire sauce. Add bacon mixture and pour into a 3 quart oven safe dish. Bake for 45-50 minutes until bubbly hot. Serve immediately. Do put a cookie sheet under the dish as it might bubble over!

  • Preheat oven to 360 degrees F.
  • Combine beans, onions, brown sugar, mustard, ketchup, salt, and pepper in a large baking dish. Lay bacon strips across top of beans. Squirt ketchup in a zig-zag pattern across the top of beans and bacon. Bake, uncovered, for 1 hour and 45 minutes.

Steps:

  • Preheat oven to 275 degrees. Wash and clean the beans, then place them in a bowl and cover with water. Let soak overnight, adding more water if necessary. Drain the beans and wash again. Put beans in a saucepan, cover with fresh water, and bring to a boil. Boil until the beans are soft, then drain, reserving the broth. Layer the beans, onions, sugar, diced bacon square and all other ingredients in a bean pot or ovenproof dish, adding bean broth to bring beans to desired consistency. Bake uncovered for 5 to 8 hours, stirring occasionally. If beans seem to be getting too brown, put on cover while baking.

Steps:

  • Brown ground beef. Set on paper towel lined plate to drain.
  • Brown bacon pieces.
  • Sautee the onion and garlic in bacon drippings.
  • Mix together the brown sugar, ketchup, molasses, and dry mustard in a big aluminum pan.
  • Add the beans, ground beef and bacon pieces.
  • Bake at 350 degrees for 1 hour.
  • You can adjust the amount of ketchup to your taste. I use between 3/4 and 1 cup.
