Mashed Potatoes Two Ways image

Steps:

  • For the potatoes: Generously butter two 4-quart baking dishes.
  • Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  • For the shallots: Meanwhile, add the oil to a large skillet set over medium heat. When the oil is hot, add the shallots in batches and fry until golden brown, 30 seconds to 1 minute per batch. Remove with a slotted spoon and drain on paper towels.
  • Preheat the oven to 350 degrees F.
  • Drain the potatoes in a large colander. Put them back in the dry pot and put the pot back on the stove. Mash the potatoes over low heat, allowing all the steam to escape before adding the other ingredients. Turn off the heat and add 3 sticks butter, the cream cheese, heavy cream, salt and pepper. Mash to combine.
  • Spread the shallots in the bottom of one of the buttered dishes, reserving a few for decorating the top. Scoop half the potatoes on top of the shallots and spread out. Arrange the reserved shallots on top. Scoop the rest of the potatoes into the second dish. (If you are making these ahead, cover and refrigerate the dishes at this stage.)
  • To cook, throw pats of the remaining 1 stick butter over the top of the potatoes and bake until the butter is melted and the potatoes are warmed through, 20 to 30 minutes. (It will need 1 hour if coming from the fridge.)

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

Steps:

  • Peel, cut up and boil potatoes until tender.
  • Drain water and put potatoes in a mixing bowl.
  • Add margarine, sour cream and milk.
  • Use an electric mixer and mix until desired consistency.
  • The KEY here is to add salt and pepper to taste.
  • You might add anywhere from a teaspoon to several tablespoons of salt, just depending on how much you like salt.
  • Pepper is the same way, although use it more sparingly.
  • Just remember to add a little at a time, until you get it where you like it.
  • Once that is done, I usually put a couple of pats of margarine on top of the finished potatoes to let it melt.
  • Then sprinkle parsley over it.
  • This will make the best mashed potatoes I've ever found anywhere.

  • For variations, see below.
  • Peel and quarter potatoes. Add to large pot, cover with 3" of cold water, and bring to a boil.
  • Add salt and simmer potatoes until tender, about 15 minutes.
  • Reserve 1 cup of cooking liquid and drain potatoes in colander.
  • Return potatoes to pot with milk, butter and 1/2 cup reserved liquid.
  • Mash with potato masher until almost smooth, adding more cooking liquid as needed.
  • Season to taste.
  • Bacon-onion mash: Mix 8 chopped, cooked slices bacon and 3/4 cup finely chopped scallion greens into finished potatoes.

Steps:

  • Peel the potatoes, removing as many of the eyes as possible with the tip of your peeler. (If you prefer more rustic mashed potatoes, keep the skin on half of them.).
  • Submerge the potatoes in a bowl of cold water to keep them from turning brown while you are chopping them.
  • Cut the potatoes into similar-sized chunks so that they will cook evenly: the cubes should be about 1½ to two inches wide.
  • Submerge cubed potatoes into a pot of water that is large enough to hold the potatoes with enough water to cover. Add salt, if desired. Place the pot over a high heat and bring the water to a boil. Reduce heat to simmer.
  • Simmer, covered, until tender--about 15-20 minutes. A knife tip inserted into a potato should meet no resistance; if the potato clings to the knife, the potatoes need to cook longer. When potatoes are done, remove from heat and drain immediately.
  • Let the potatoes sit for a minute to dry and to allow any excess water to drain from the bottom of the colander. Meanwhile, heat the butter and cream in a small saucepan at a low temperature. (You can also use the microwave for this step.).
  • Return the cooked potatoes to the large pan and mash them with the back of a spoon, a food mill, or a potato ricer.
  • Gently stir in the warm butter and cream.
  • At this point, taste the potatoes for proper seasoning and adjust it to taste. Test for consistency, too: if the potatoes are too thick, add more cream. Other herbs and spices can be added at this point as well--chopped chives, Italian parsley, Parmesan cheese, crumbled bacon, roasted garlic, chopped scallions or creamed leeks are all delicious matches.
  • ***To reduce the fat content of traditional mashed potatoes, use low-fat sour cream in place of butter, and milk or broth rather than cream.
