Steps:

  • In a small bowl, combine the carrot, oats, milk, Worcestershire sauce, garlic, salt and pepper. Crumble beef over mixture and mix well. Shape into two 1-in. thick patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until a thermometer reads 160° and juices run clear., Meanwhile, place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. Press through a potato ricer or strainer into a small bowl. Stir in the milk, salt and white pepper. , Place one burger on a serving plate. Spread 3/4 cup mashed potatoes over top. Top with remaining burger. Spread remaining mashed potatoes over top and sides of cake. In a small bowl, tint 4 teaspoons cream cheese orange; pipe carrots over top of cake. Tint remaining cream cheese green; pipe tops on carrots. Press bread crumbs into sides of cake.

HAMBURGERS WITH BROWN GRAVY (TOTAL COMFORT FOOD AKA "MEAT CAKES" :)

These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

Hamburgers with Brown Gravy (TOTAL Comfort Food aka

Steps:

  • Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
  • Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
  • Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
  • Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
  • Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
  • When gravy has thickened, place burgers back in the pan and cover.
  • Simmer for about 20 minutes, or until burgers are done.
  • Serve with mashed potatoes or egg noodles.
  • YUMMY!

6 pieces bread, broken into small bits (potato bread works great, but I usually use white bread)
1 envelope onion soup mix, dry
to taste salt, to taste (because of the soup mix, you may not need it, although we still do)

Steps:

  • Stir the flour, baking powder, baking soda and salt together; set aside.
  • Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
  • Beat in the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the mincemeat.
  • Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
  • Stir in the nuts.
  • Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
  • Preheat the oven to 350 degrees F.
  • If using a Bundt pan, bake for 55 to 60 minutes or until done.
  • If using a cake pan, bake for 45 to 50 minutes.
  • In either case, cool in the pan for 10 minutes.
  • Remove from the pan and cool completely.
  • Dust with icing sugar before serving.

  • Preheat oven to 400 degrees F (205 degrees C). Grease 36 cups of 3 large muffin tins.
  • In a medium saucepan, combine the rice with water. Bring to a boil over high heat, uncovered, and cook 10 minutes. Reduce heat to low, cover, and simmer 20 minutes. Remove from heat, let cool several minutes, then fluff with a fork and set aside.
  • In a large bowl, combine the potatoes, carrots, celery, ground beef, and eggs. Mix ingredients together using your hands or a sturdy spoon. Add salt, olive oil, rolled oats, and rice; mix well.

Steps:

  • Preheat oven to 350 degrees. Coat two 9-by-2-inch round cake pans with cooking spray; set aside. Melt butter in a medium skillet over medium heat. Add onion, garlic, and celery; cook until softened, about 7 minutes. Transfer to a large bowl; let cool.

This is my recipe for meat loaf. However, I have always cooked it in a 9x11 pyrex baking dish so my husband calls it meat cake. It even has an "icing " on top. I usually make mashed potatoes and a green vegetable to go with this. I also have enough leftovers to make meat cake sandwiches later in the week. The meat cake sandwiches are delicious.

Steps:

  • Saute first 3 ingredients till translucent and let cool.
  • Mix together bread crumbs, milk, and eggs.
  • Add in 1/2 can of the tomato paste till mixed inches.
  • Add the sauteed vegetables.

  • By hand mix in the meat so it is well incorporated with all other ingredients.

  • Preheat oven to 375 degrees. Distribute the cornflake crumbs on a platter. Combine all the remaining ingredients except the butter and accompaniment in a nonreactive bowl and toss gently until well blended. Make 8 crab cakes no more than 3 inches thick, pressing the ingredients together well.

EASY FROSTED MINCEMEAT CAKE

This was so easy to make, and the raves never stopped! Could not beleive that this was possible, since I usually make tarts and pies with mincemeat. Definetly something different in cakes!

Easy Frosted Mincemeat Cake image

Steps:

  • Mix 3 eggs in a bowl along with all the extracts (do not need to beat, just mix).
  • Empty cake mix into large bowl.
  • Add egg mixture and mincemeat.
  • Add alcohol if desired.
  • Mix thoroughly using mixer or by hand.
  • Pour into 9x13 cake pan.
  • Bake at 350 for 45 minutes or until toothpick comes out fairly clean (do not over bake- mincemeat keeps cake moist so use discretion).
  • Let cool for 30 minutes and remove from pan.
  • Frost and serve.
