POLISH SAUERKRAUT AND CARROT SALAD
This is a tart and fresh salad, eaten in Poland during the winter months, when fresh vegetables used to be scarce and home cooks would mainly rely on fermented or tinned vegetables.

Steps:
- Place sauerkraut in a colander and squeeze out all excess liquid using your hands; chop well.
- Combine sauerkraut, onion, apple, and carrots in a large bowl and mix. Add oil and sugar and toss to combine. Season with caraway seeds, salt, and pepper. Refrigerate 30 minutes before serving.

My husband's Polish Aunt shared this with me.It works as a side dish or a main vegetarian meal.Really great in the summer.

- Peel potatoes,boil until tender,dice small.
- Dice carrots,celery,tomatoes,eggs,pickle, and onion.
- Peel and core apple. Dice. Add to carrot mixture.
- Mix together dressing ingredients.
- Combine dressing and vegetables and refrigerate at least 3 hours.

Steps:
- Sprinkle salt over cucumbers in a bowl. Let stand until cucumbers are soft, about 5 minutes. Squeeze liquid from cucumbers and discard. Add dill to cucumbers.
- Mix sour cream, lemon juice, and sugar in a bowl; add to cucumbers and toss to coat. Season with black pepper. Chill completely before serving, at least 30 minutes.

ASSORTED POLISH CANAPES
This is an assortment of Polish appetizers and all the ingredients are not necessary. The amounts are an estimate, depending on which canapes you choose to make. You choose the ones you wish to make and use just those ingredients needed. Times are approx and number of servings depends on how many you make. - HAM CANAPÉS (kanapki z szynka).
- Thinly spread bread with butter (plain or flavored with mustard or horseradish or with any of the various butter recipes in this section), top with a thin slice of ham the size of the bread and cover with a small slice of tomato, cucumber or radish.
- ROAST MEAT CANAPÉS (kanapki z pieczystym).
- Thinly spread bread with plain, mustard or horseradish flavored butter. Top with a thin slice of cold roast beef, roast pork, roast turkey or chicken. Garnish with a small tomato wedge and strip of green pepper plus a dollop of mayonnaise, or with a dab of whole-style cranberry sauce and a sprig of parsley.
- SMOKED SALMON CANAPÉS (kanapki z lososiem).
- Thinly spread bread with dill butter, top with a piece of lettuce, a slice of smoked salmon (lox), a small wedge of peeled lemon and a radish slice.
- EGG CANAPÉS (kanapki z jajkiem).
- Thinly butter bread with plain, dill or garden-green butter, top with a hard boiled egg slice, decorate with a splotch of mayonnaise (or a blend of mayonnaise and brown mustard) and a small thin radish slice stuck in the mayonnaise. Sprinkle with chopped chives and dust with paprika.
- YELLOW CHEESE CANAPÉS (kanapki z zoltym serem).
- Cover bread thinly with plain or mustard flavored butter, a slice of yellow cheese, garnish with a strip of green pepper and/or radish and dust with paprika.
AUTHENTIC POLISH CUCUMBER SALAD (MIZERIA)
Don't let the name deceive you - This is very easy, no misery involved! I love Polish food but it is usually high in salt or fat, so I don't make it very often (unfortunately!). This is a very refreshing side dish, especially during the hot summer months. * You can substitute lemon juice for the vinegar and dried dill for the fresh, if you need to.

- Place cucumbers in a medium bowl.
- Add salt.
- Mix lightly until salt adheres evenly to cucumbers.
- Cover and refrigerate for one hour.
- Drain juice from limp cucumbers.
- In a small bowl, combine the remainder of the ingredients.
- Add to cucumbers, mixing gently.
- Cover and refrigerate until ready to serve.
