MEDITERRANEAN CAULIFLOWER STEAKS

Thick cauliflower steaks slathered with hummus and topped with olives, roasted red peppers, and nutritional yeast.

Steps:

  • Trim leaves off cauliflower and slice into thick "steaks", 1 1/2 to 2 inches thick. Brush with olive oil and garlic on both sides.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Grill cauliflower steaks until golden brown, 5 to 7 minutes per side.
  • Top each steak with a generous amount of hummus. Divide olives, red pepper, and nutritional yeast evenly on top. Cut zucchini into ribbons using a spiralizer. Garnish steaks with zucchini ribbons.

ROASTED CAULIFLOWER STEAKS

The recipe comes to us courtesy of Erin Wysocarski, of Redondo Beach, Calif., a 10-year vegan who has grown accustomed to bringing portable food to holiday gatherings. "Most folks who have never heard the term 'cauliflower steak' give a little chuckle," said Ms. Wysocarski, who writes the Olives for Dinner vegan food blog. "This cauliflower steak tastes good because of the way it's sliced - it gets a little crispy around the edges (especially if you use a cast iron pan) and stays succulent toward the middle." The dish has the added benefit of being portable and easy to reheat.

Roasted Cauliflower Steaks image

Steps:

  • Slice the cauliflower through the center, keeping as much intact as possible. Season the "steaks" with salt, freshly ground pepper and sage.
  • Heat a cast-iron skillet over medium-high heat. Add olive oil and place cauliflower carefully in the pan. Sear the cauliflower for 3 to 4 minutes per side, until deeply golden. Serve with vegan gravy, if desired.

Steps:

  • In a 6-qt. stockpot, place a steamer basket over 1 in. of water. Place cauliflower in basket. Bring to a boil. Reduce heat; steam, covered, until crisp-tender, 4-6 minutes. Drain and return to pan., Stir in tomatoes, olives, onions, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, until cauliflower is tender and tomatoes are heated through, 3-5 minutes. Sprinkle with feta cheese before serving.

  • Preheat the oven to 425 degrees Fahrenheit with a rack in the upper third of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the cauliflower from sticking.
  • Carefully remove any green leaves surrounding the cauliflower. Using your sharpest chef’s knife, gently slice off the protruding base of the cauliflower to create a more flat surface. Place the cauliflower on a cutting board, flat side down.
  • Now we’ll use the chef’s knife to create 1-inch parallel slabs of cauliflower. To create your first slab, gently saw back and forth about 1-inch away from an outer edge (these florets will likely fall apart, and that’s ok). Continue slicing 1-inch slabs until you have worked your way through the cauliflower.
  • Gently brush both sides of the slabs (and all over the florets) with the olive oil and place them on the prepared baking sheet. Sprinkle the salt on top, followed by several twists of black pepper.
