SUMMER SQUASH MEDITERRANEAN STYLE

I put this together a few years back. I make this as a side dish in the Summer quite often. It is flavorful and my family loves it. This is for the person who doesn't like Zucchini and tomatoes. Personally I prefer my Zucchini this way. Enjoy!

Summer Squash Mediterranean Style image

Steps:

  • 1. Cook garlic in a pan with 1 tsp olive oil. It takes about 30 seconds in a hot pan. Do not over brown it. Just cook until it starts to brown. Remove from heat and set aside.
  • 2. Add the butter and olive oil to pan. Mix together until melted. Add all vegetables to pan.
  • 3. Cook on med. high high heat. Keep stirring constantly folding veggies from bottom to top. After 5 minutes. Add the seasonings. Stir to combine.
  • 4. Cook until onions are nicely camelozed and Zucchini is cooked but not mush. Stir in cooked garlic.
  • 5. After it is cooked. Add more of the same seasonings if desired. I usually add more salt and basil. Taste it and decide for your self. ( it depends on the size of zucchin used etc. )
  • 6. Sprinkle parmesean cheese over vegetable mixture. Stir well to combine. Keep folding veggies on heat. After 3 minutes or so ready to serve.

2 medium zucchini or 1 zucchini and 1 yellow squash
1 large sweet onion chopped large pieces
1 red or green bell pepper chopped
1 cup sliced mushrooms
1 Tbsp basil, dried
1 tsp garlic salt
1 tsp or more oregano
1/2 tsp or more black pepper
1/2 tsp thyme optional
1/2 c parmesan cheese fresh grated
2 Tbsp butter
3 Tbsp olive oil
2 grated or minced clove garlic

Steps:

  • Place 1 in. of water in a saucepan. Add squash and zucchini. Bring to a boil; cook for 4-5 minutes or until crisp-tender. Drain and set aside. In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1 tablespoon drippings., In the drippings, saute onion until tender. Add the squash, brown sugar and seasonings. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 10 minutes or until heated through. Sprinkle with bacon. Serve with a slotted spoon.

Zucchini & Yellow Squash Medley With Summer Herbs image

Steps:

  • In a large skillet (or wok), saute the squash and garlic in olive oil on medium-high heat about 5-10 minutes, stirring often.
  • Add herbs and stir well.
  • Reduce heat to medium; continue cooking for an additional 10 minutes, stirring twice.
  • Add parsley, salt and pepper and stir well.
  • Cook 5 minutes more, or until squash is done.
  • Add pinch of sugar and lemon slices; stir well.
  • Serve sprinkled with grated Parmesan cheese.

This is an old family recipe. We cooked it without measuring ingredients so I had to stop and weigh and measure in order to post it! Not hot spicy, but a different and flavorful way to cook summer produce and it is even better the next day (if it lasts that long).

Mexican Style Squash Medley image

Steps:

  • Heat oil in large lidded skillet.
  • Add squash, onion and garlic and saute until tender crisp.
  • Add jalepeno (if using), tomatoes, corn, chili powder, salt and pepper.
  • Cover pan, reduce heat and simmer until it all cooks down (about 25 minutes, more or less to your taste). Stir occasionally.
  • Uncover pan, sprinkle cheese on top. Serve after cheese melts.
  • This lends itself nicely to whatever else you have around. Chopped bell peppers are a nice addition.

2 tablespoons vegetable oil
1 1/2-2 lbs crookneck yellow squash or 1 1/2-2 lbs pattypan squash, chopped into 2 inch chunks
1 onion, chopped
3 garlic cloves, minced
1 jalapeno, chopped (optional)
1 (14 1/2 ounce) can diced tomatoes, undrained (or equivalent of fresh)
1 (14 ounce) can corn, undrained (or equivalent of fresh kernels)
1 teaspoon chili powder

1 cup shredded cheddar cheese (may use pepper jack or monterey jack)

Steps:

  • Cook bacon til crispy, remove from pan and put on papertowel. Save 2 T.bacon grease.
  • Slice squash into 1/2" slices, then in quarters (pie pieces). Slice onions, chop garlic, slice mushrooms.
  • Heat bacon grease and add above listed veggies. (Not the tomato) Cover with lid, and cook on medium low heat until squash is tender and onions and garlic begin to develop carmel color.
  • Remove veggies from heat, and drain off fat.
  • In medium bowl, scramble 4 eggs, add salt and pepper.
  • Spray omelet pan with Pam, heat pan over medium low heat, evenly pour in 1/2 of egg mixture, coating the entire bottom of pan then cover pan with lid. When the top of omlette is no longer runny or wet looking, add 1/2 of the cheese, 1/2 of the veggie mixture and 2 slices of bacon. Quickly fold over omelet and cover another minute just long enough for cheese to melt. Place omlette on plate. Top with fresh slices of tomato. Repeat these directions to make the second one.
  • (Note: The best omelet are neither undercooked or over cooked. The outside of the omelet should be tender, but not brown).

Steps:

  • Heat 1 teaspoon of the oil in a wide nonstick frying pan or wok over medium-high heat. When oil is hot, add half each of the chopped onion, mushrooms, squash and thyme. Stir fry until squash is hot and bright in color (about 3 minutes). Add 1/4 cup water and 1 1/2 tablespoons of the lemon juice to pan; cover and cook until vegetables are just tender to bite (about 3 minutes). Uncover and continue to cook, stirring until liquid has evaporated (about 3 minutes more). Remove vegetables from pan and set aside.
  • Repeat to cook remaining chopped onion, mushrooms, squash and thyme, using remaining 1 teaspoon oil; add 1/4 cup water and remaining 1 1/2 tablespoons lemon juice after the first 3 minutes of cooking.
  • Return all cooked vegetables to pan; gently stir in tomatoes. Transfer vegetables to a serving dish; sprinkle with green onions, cheese and olives.

Acorn Squash Medley image

Steps:

  • Halve both acorn squash and remove and discard seeds. Place upside down on microwaveable dish and cook on high for 8-10 minutes until softened. Scoop out squash leaving approximately 1/4 inch on shells to retain their shapes. Set aside. Cook sausages, cool and cut into 1/2 inch size bites. Saute thinly sliced garlic, shredded carrots and chopped peppers in olive oil for 3-4 minutes until softened. Stir in spinach, mushrooms and seasonings and cook 3-4 minutes more. Remove from heat, combine with cooked rice, sausage and squash. Fill each half of the acorn shells with equal amounts of the filling. Bake in 350 degree oven for 20 minutes. Cool five minutes before serving. Enjoy.

  • Cut squash in half lengthwise, discard seeds. Place squash cut side down in a microwave-safe dish or plate. Microwave, uncovered, on high for 10-12 minutes or until tender.   • Mix well.

  • Season with salt, pepper, and spice mixture. Toss with a wooden spoon to make sure vegetables are well coated with the spices. Cook on medium-high, stirring occasionally, until squash and peppers are nice and tender (I like my squash to have some carmalized parts, so it helps to raise the heat for a little while.)
