Strawberry and Hazelnut Salad with Orange Blossom Dressing image

Steps:

  • Cover the raisins with hot water in a small bowl and let stand until plump, about 10 minutes. Drain and set aside.
  • Meanwhile, toast the hazelnuts in a large pan over medium-high heat, shaking the pan frequently, until the skins begin to fall off and the nuts are toasted, 5 to 7 minutes. Transfer to a cutting board and coarsely chop. Set aside.
  • Mix the white wine vinegar, orange blossom water, honey and 1/4 teaspoon salt in a large bowl. Whisking constantly, slowly drizzle in the olive oil until emulsified. Add the strawberries, figs, apricots, spring mix, hazelnuts, raisins and 1/2 teaspoon salt to the bowl and toss until well combined. Serve immediately.

Steps:

  • Combine the vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring often to dissolve the sugar. Remove from the heat and allow to cool.
  • Put the cantaloupe and honeydew in a bowl and toss with the basil and mint. Drizzle with the sweetened vinegar and toss lightly. Pile the melon on a platter and sprinkle with the flake salt.

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

Add the cream and check the seasoning - this is a sweet-sour dressing, so you need to get the balance right. You might want to make it a bit milder by adding a little more cream.
  • Halve the smaller tomatoes and cut any larger ones into wedges. Put in a shallow serving bowl.
