MELT-IN-YOUR-MOUTH MEAT LOAF

Steps:
- Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

This is just like its name--it is truly a delight to eat. Making it is really simple, and it doesn't last long once it starts to get eaten.

Steps:
- Preheat the oven to 400°F.
- Start with the crust: Mix the pecans and flour together. Melt butter; add to mixture and stir until moist.
- Press into a deep ungreased 9x11 inch pan--crust should be thin.
- Bake until lightly brown; cool completely.
- Blend the cream cheese and Cool Whip together until smooth. Add sugar slowly until mixed well (make sure the Cool Whip is defrosted and the cream cheese is at room temperature before starting). Spoon filling into crust and let sit in the refrigerator while you mix the pudding.
- Mix the 2 boxes of pudding with the milk. When the pudding is thickened, add it to the top of the cream cheese mixture. Let set in the refrigerator.
- Next spread the last tub of Cool Whip on top of the pudding, being careful not to mix with the pudding.
- Top with chopped pecans.

- Cut the Crisco into the flour and salt. Don't overwork. This should be very rough consistency.
- Beat the egg; add vinegar and water.
- Sprinkle the water mixture over the flour.
- Toss with a fork until coarsley mixed.
- Divide dough in half for two pie crusts. Shape into balls and chill 15 minutes.
- Roll on floured surface.
- Balls of dough may be combined for a large cobbler crust.
- Follow baking instructions for your pie or cobbler.

MELT IN YOUR MOUTH CHICKEN PAN PIE
I got this recipe several years ago from a church cookbook and I have made it so many times. My family loves it. It can be made up and refrigerated over night, then just pop it in the oven the next day. Serve with a salad and your meal is complete.

- Boil chicken until tender. Debone and cut into small pieces. Reserve 2 cups of broth. Put chicken in a 9x13 pan. In saucepan, bring 2 cups broth and 10 1/2 can cream of chicken soup to a boil. Drain 16 ounce can of veg-all vegatables and pour over chicken. Pour broth mixture over vegetables. In a bowl combine flour, salt, pepper, buttermilk and margarine. Mix thoroughly with spoon to form batter. Spread batter on top. Bake at 425 for 30 minutes.
- For OAMC: Bake as directed above, then wrap, seal and label. Note: You may want to make slightly saucier if you want it creamier from the freezer.

MELT-IN-THE-MOUTH MINCE PIES
A Sophie Grigson recipe. This pastry is easy to work with and has great taste and texture. It freezes really well too.

- PASTRY:.
- Sift the flour into a bowl with the icing sugar and 1/2 tsp salt. Using a knife or a processor, cut the butter and cream cheese into the flour mixture until it resembles coarse breadcrumbs.
- Add enough cream to mix to a soft dough. Gather into a ball and knead very briefly to smooth it out. Divide dough into 2; wrap each in cling film and chill for at least an hour.
- Lightly grease your bun tins. On a lightly floured surface roll out the pastry to the thickness of a coin, then stamp out equal numbers of 6cm and 7cm circles. Roll up the offcuts, knead lightly, and then roll out again.
- Use the larger circles to line the cups of the tins. Place a heaped tsp of mincemeat in each cup, cover with the smaller disc and lightly press together. Make a small hole in the centre of each lid for the steam. Chill for 30 minutes before baking.
- Heat oven to220/gas 7 and place a baking sheet in the oven to heat up (the intense blast of heat to the bases helps them to cook through more effectively).
- Bake for 10 minutes approx; reduce heat to 180/gas 4, then cook another 10 minutes, until golden brown. Brush lightly with milk, dust with caster sugar, and then return to the oven for approx 1 minute.
- Cool in the tins for 5 minutes, and then ease out. These will freeze for up to 3 months!

- Preheat oven to 400 degrees.
- Cook veggie mix in microwave.
- Put one of the pie crusts in the bottom of a 2 quart casserole dish and brush with egg white or milk and bake for 8 to 10 minutes.
- Saute veggie mix in butter for 10 minutes.
- Add flour to sauteed mixture, stirring well. Cook one minute stirring constantly
- Add potatoes.
- Combine broth and half-and-half.
- Gradually stir into vegetable mixture.
- Cook over medium heat stirring constantly until thickened and bubbly.
- Stir in salt and pepper; add chicken and stir well.
- Pour into casserole dish and top with other pie shell.
- Cut slits to allow steam to escape.
- Bake for 30 to 40 minutes, or until pastry is golden brown and filling is bubbly and cooked through.
