THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, thoroughly mix ground beef, onion, salt, pepper and garlic powder. Mix in bread, milk, egg, 2 tablespoons mustard and 1/4 cup ketchup.
- Press the meat mixture into a 9x5-inch loaf pan. In a small bowl, stir together remaining mustard, ketchup and brown sugar; pour on top of the meat loaf.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

- preheat oven to 350.
- open cooking bag and spray inside evenly with cooking spray. Place bag inside large baking dish and set aside. (These bags can be found in the foil isle).
- dissolve bouillon cube in 1 cup hot water and set aside.
- slice onion thinly and set aside.
- place ground beef in large mixing bowl and break apart to loosen meat.
- break eggs into small mixing bowl and beat with fork until smooth.
- pour eggs on top of ground beef.
- add all of the other ingredients EXCEPT THE WATER WITH THE DISSOLVED BOUILLON CUBE.
- mix thoroughly with your hands ensuring that all ingredients are worked through the meat evenly.
- tip: You can wear latex gloves to mix your meatloaf. It helps mix all the ingredients evenly and solves the problem for those who do not like to handle raw meat.
- shape meat into a nice log shape.
- place sliced onion on top of meatloaf.
- gently slide meatloaf into the prepared cooking bag.
- pour dissolved bouillon cube mixture into the cooking bag.
- close bag with bag fastener.
- cut two small air holes on top of the bag.
- bake for approximately 1 hour.
- check meat temperature with a baking thermometer to ensure that your meatloaf is completely cooked in teh middle. Meatloaf should be golden brown on the outside.
- Let meatloaf sit for 15 minutes before slicing and serve with your favorite side dishes.

MOM'S MEATLOAF

- In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
- In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.

- Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.
MAW-MAW'S MEATLOAF WITH SECRET SAUCE
This recipe was original brought to us by my aunt when she lived in Germany, but my grandmother always used to make it for us. My 4-year old daughter loves this recipe and begs to mix up the "secret sauce." Hope you enjoy it as much as we do.

- Preheat oven to 350 degrees.
- Roll out corn flakes into crumbs. If using rolled oats, then just leave as they are.
- In a medium mixing bowl, add corn flakes, milk, onion, eggs, beef, salt, and pepper and mix together.
- Shape into a loaf and put into a microwave-safe baking dish.
- Add ketchup and tomato juice around meat.
- Put meatloaf in microwave for 15 minutes, then transfer to oven for 20-30 minutes.

MAMAW'S MEATLOAF

- Loaf:
- Mix and shape into a loaf all items except for the sauce items. Place into baking dish leaving enough room to gather grease. As it bakes drain off grease. Bake 40 minutes on 350 degrees.
- Sauce:
- Top with a the mixture of remaining items and cook for another 15 minutes (or longer if you like the sauce kinda burnt).
- Serve with mash potatoes and green beans.

MEMAW'S COLLARD GREENS
My Memaw was a great cook of southern soul food and she taught me this recipe. When I got married, I made it a tradition in my family. The kids know the minute they walk into the house that Dad's making greens (the aroma fills the air). And no matter where we have our holiday meals or who is in charge of the menu, I insist on bringing the greens.

- Thoroughly wash greens in a sinkful of cold water.
- Break stems off an inch or two below leaf and discard.
- Tear/shred the leaves by hand and place them in a large cooking pot.
- Add bacon, 1/4 cup of sugar, and about 2 tablespoons of salt.
- Fill pot with water up to about 1 1/2 inches from top of pot.
- Bring to a boil, then reduce heat, and simmer for about 2 hours, stirring occasionally (water will cook off, so add more if necessary).
- After 2 hours, add more sugar (not more than 1/4 cup; I usually add slightly less) and more salt to taste.
- Fill the pot back to about half-full with water.
- Cover, boil, reduce heat, simmer, and stir occasionally for another 1 1/2-2 hours (if more water is needed, add only enough to keep about three fingers worth in the pot).
- Serve with a slotted spoon to drain away water and eat'em up (some folks eat'em with tabasco or pepper sauce).
- These are great as a side dish with fried chicken, country ham, meatloaf, turkey, roast, or as a companion to a big bowl of beans.
- I usually enjoy the leftovers with nothing but a pan of cornbread.
MR. JOHN'S MEATLOAF
The chorizo sausage nestled in the center of the meatloaf really sets this dish apart. If you cannot find fresh chorizo, substitute any fresh, spicy sausage.

MAMA'S MEATLOAF
A stick to your ribs, delicious slice of comfort food. Great cold for sandwiches the next day! I sometimes substitute matzo meal or bread crumbs for the oatmeal.

- In a large mixing bowl, combine ground beef, sausage, chopped onion, egg, oatmeal and 1/2 cup of the ketchup.
- Mix together thoroughly. The best way to do this is with your hands!

- Some cooks put all ingredients into a loaf pan "raw", but I prefer to sauté the onions first to take the "bite" out of them.
- Drain and set aside to cool.
- Into a large bowl place the ground beef, bread crumbs, catsup, egg, Worcestershire sauce and parsley.
- Add the sautéed onions to this mixture.
- Wash your hands and delve into this mixture like a mad man, squish it between your fingers and mix it very well.
- Form a loaf in a baking dish, leaving at least 1-inch around the sides so fat can drain off.
- Bake at 350°F about 45 minutes or until done.
- Serve this delicious meatloaf as is or with my recipe for curry sauce.
