GERA'S AMISH FUNNY CAKE
Amish cooking is amazingly simple and incredibly delicious. This 'funny' pie flips its chocolate and cake layers during the baking process. The result will make you flip! Leftovers can be kept for up to one week in the refrigerator.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Beat together 1 cup sugar, cocoa powder, hot water, and 1 teaspoon vanilla extract with an electric mixer on medium speed until the sugar dissolves, about 3 minutes. Pour this batter into the pie shells.
- Sift together the flour and baking powder; set aside. Cream together 1 cup sugar with the butter. Beat in the vanilla, then the eggs, one at a time. Slowly beat in half of the milk, then half of the flour until moistened. Mix in the remaining milk then flour. Carefully spoon this batter on top of the chocolate batter, making sure that the entire top of the cake is covered with no chocolate visible.
- Bake in preheated oven until a toothpick inserted into the center of the cakes comes out clean, about 30 minutes. Remove from the oven, and allow to cool for at least 1 hour before serving.

- In a small saucepan, combine 1 cup of sugar and cocoa. Blend in 1/2 cup milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, about 2 minutes. Pour into unbaked pastry shells, tipping to coat the pastry halfway up the sides; set aside. In a bowl, combine flour, baking powder, salt and remaining sugar. Add egg, shortening, vanilla and remaining milk; beat until smooth. Starting at the edge, spoon batter into the pastry shells, completely covering the chocolate. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm or chilled with whipped cream if desired.

VERA'S MENNONITE CAKE
We first enjoyed this delicious cake at a Mennonite Church potluck dinner, courtesy of a wonderful baker named Vera. She didn't have a title for her cake, so I named it myself. The texture of this cake is like a big pound cake, and the taste reminds me of tutti-frutti!

These are Pennsylvania Dutch Funny Cakes, baked in a pie crust with a chocolate "funny" layer that sinks to the bottom while baking.

Steps:
- Combine 1 cup sugar, cocoa, water, and 1 teaspoon vanilla in a saucepan. Heat over medium-low heat to the boiling point, but do not boil. Set aside.
- In a large bowl, cream together 1 1/2 cup sugar and butter. Beat in eggs. Stir in milk and 1 teaspoon vanilla. Combine flour and baking powder; mix into the creamed mixture. Divide batter into the pastry shells. Pour 1/3 of the cocoa mixture on top of the cake batter in each pastry shell.
- Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes, or till cake is done.

FUNNY CAKE
Funny cake is kind of a cake/pie combination, as is Shoo-fly pie. It has a cake "filling" surrounded by a pie crust. Also, like shoo fly pie, it has a "wet bottom" - a layer of chocolate goo between the pie crust bottom and the cake top.... and funny cake is very, very good!!!

Steps:
- Combine bottom layer ingredients in a saucepan.
- Cook, stirring constantly just to boilng, lower heat and simmer gently 2 to 3 minutes.
- Set aside.
- For cake layer, blend eggs, sugar& butter.
- Beat 2 to 3 minutes.
- Alternately beat in milk& flour/baking powder mix.
- Add vanilla.
- Pour into unbaked pie shells.
- Pour chocolate mixture over top of batter.
- Chocolate will be very runny but will thicken and"sink" below batter as it bakes.
- Bake at 350º for 35 to 40 minutes.
