SLOW-COOKED PORK BURRITOS
I have been making these slow-cooker burritos for as long as I can remember, changing the recipe now and then to add variety. This is the version we serve for casual get-togethers with friends. -Sharon Belmont, Lincoln, Nebraska

MEXICAN CROCK POT PORK TORTILLA FILLING
I always struggle to find something to do with the pork steaks that come in the bottom of the pork chop package. My family loves Mexican food and the ingredients are usually in my pantry. I throw it together together in the morning before I go to work.

Steps:
- Seer pork. Can be done the night before.
- Put everything except rice and tortillas in crock pot.
- Cover and cook 9 hours on low.
- Add rice and continue cooking for 30 minutes. It should look soupy if if doesn't add 1/2 C water with rice.
- I serve with cheddar cheese and sour cream on flour tortillas.
- This recipe is very forgiving. It can also be converted to a soup by adding chicken broth and omitting the rice.

FABULOUS TORTILLA FILLING!
This is an evolved recipe. I started with a recipe for cinnamon lime fajitas, but I'm not keen on the potatoes. I didn't have peppers; but I do have cabbage...Look, a recipe for fajitas using cabbage! But it's raw and it's winter....nahhh. This is what I came up with & as weird as it sounds, it is delicious! At least to us - everybody, even THE PICKY ONE, loved this. No leftovers for the 4 of us but it's easily doubled. It says 8 tacos because that is the yield I got with corn tortillas. Please remember that flour tortillas are often bigger & will need more filling. I hope someone else enjoys this, too!

Steps:
- In a 9x13" baking dish, sprinkle chicken with salt, cinnamon & chili powder. Add lime juice & swish it all around; marinate for awhile, half hour or so while the oven preheats.
- Preheat the oven to 450°F When hot, add pan of chicken for about a 1/2 hour until cooked. Remove from pan to a cutting board to cool a bit before slicing thinly (like a flank steak) and returning to pan.
- While the chicken is in the oven --.
- If you have one, a 12" cast iron skillet is perfect for this. Heat 3TB oil over medium to low heat. Add onion & seasonings. I used regular 'chili powder' but next time might use ancho or even chipotle. Slowly caramelize the onion. Add cabbage, oregano, lime juice & salt. Toss until wilted. Remove from heat.
- If using flour tortillas, warm and make fajitas! If using corn, briefly fry in hot oil and make tacos! Heck, roll into a tortilla & make enchiladas! Go for it!
- Add chicken & cabbage/onion mixture to wrappy device of your choice & enjoy! We didn't use salsa, sour cream, guacamole, or cheese but you could!

Steps:
- Place the first 7 ingredients in a bowl and mix.
- Place the pork shoulder in the Crock Pot (slow cooker) and rub all over with the seasoning mixture.
- Pour the jar of salsa around the pork shoulder.
- Cook on low heat for 8-12 hours.
- Remove the pork to a plate and using 2 forks, shred the into bite size pieces (I like to remove the visible pieces of fat).
- Pour a scoop or two of the juices into the pork and stir to combine (If you want to remove the excess fat from the juice you will use, pour it into a cup and refrigerate it until the fat solidifies and can be easily scooped out. Only the juices will remain).
- Place the pork into the tortillas.
- Serve with desired accompaniments.
EASY MEXICAN PORK BURRITOS
Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

Steps:
- Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
- Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
- Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
- Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

- Place the roast in the crock-pot and sprinkle the spices all over it. Add the water and cover with the lid. Cook on LOW for 6-7 hours if frozen or 4-5 hours if thawed. Alternatively, you can cook the roast on HIGH for 3-4 hours if frozen or 2-3 hours thawed. When the roast is tender enough to shred, gently pull it apart with tongs or with two forks. Break it into bite size pieces and toss the pieces in any juices left in the bottom of the pot.
- If you are making taquitos, place a dry skillet over medium high heat. Warm the tortillas in the skillet, one at a time, they will become soft and pliable and it will be easier to roll them without cracking the tortillas. You can also warm 1/4 cup of oil in the skillet and then dip each tortilla in the oil prior to rolling them.
- Preheat the oven to 350 degrees. Set out a large baking sheet. Place a warmed tortilla on the sheet, layer a tablespoon or so of cheese across the center of the tortilla and then a few tablespoons of the pulled pork. Roll the tortilla around the filling and place it seam side down on the baking sheet.
- Once all of the taquitos are rolled, bake until lightly browned and crisp on the edges. Serve with the condiments of your choice. Enjoy!
