Steps:

  • Slice the pork shoulder into about 1-centimeter (¼ in) slices, then transfer to a large dish or bowl. In a medium bowl, combine the achiote paste, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice, mashing and stirring until smooth with no lumps. Pour the marinade over the pork slices, then toss to make sure they are coated on all sides. Cover the bowl with plastic wrap, then refrigerate for at least 2 hours or up to 3 days.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper or aluminum foil.
  • Place a slice or two of the pineapple on the baking sheet. Take a wooden skewer and push it directly in the middle of the pineapple. Remove the pork from the fridge and push the slices through the skewer, layering one after the other until there is a 1-inch (2 ½ cm) gap at the top. Push another pineapple slice on top.
  • Bake for about 1½ hours, until the pork is slightly charred on the outside and deep red. Rest the meat for about 10 minutes, then carve off thin slices of pork and roasted pineapple.
  • To assemble, place some pork on the tortillas, followed by a few pieces of pineapple, a sprinkling of onion, a pinch of cilantro, and a spoonful of salsa, and some diced avocado. Serve with lime wedges.
  • Enjoy!

MEXICAN-STYLE SEASONED PORK

BONELESS PORK SIRLOIN is the natural choice for quick braising because it's leaner than pork shoulder and is thus a bit more tender, yet it still remains flavorful. In this recipe, the technique and the cut of meat allow you to achieve the richness of braised pork in much less time. This pork makes a great taco or burrito filling and can be the main ingredient in a taco salad. Squeeze a few limes wedges over the pork to brighten the flavors and add a handful of chopped fresh cilantro and a side of rice for a quick trip south of the border.

Steps:

  • In a large bowl, season the pork with the salt and pepper.
  • In a 12-inch skillet over high heat, heat the oil and add the pork, searing it on one side until golden brown, about 5 minutes. Stir the pork and continue searing it on all sides for an additional 12 to 15 minutes, stirring occasionally. The pork is done when the liquid in the pan is evaporated and the meat is evenly browned on all sides.
  • Add the chicken stock, salsa verde, garlic, tomatoes, onion, cumin, chili powder, oregano, cayenne, and 3 cups water to the skillet. Bring to a simmer and cook for 30 to 45 minutes until the liquid is almost evaporated, stirring occasionally. Reduce the heat to medium and cook for about 5 minutes, or until the dish has the desired amount of sauce. The longer you cook it, the less sauce you will have. For more tender pork, add an additional 1/2 cup water and continue cooking until the desired amount of sauce is reached.
  • The pork can be prepared up to 5 days in advance or frozen for up to 3 months. Reheat, covered, in a saucepan over low heat.

2 1/4 pounds boneless pork sirloin chops, cut into 1/2-inch cubes
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 cup Chicken Stock (page 230) or store-bought low-sodium chicken broth
1 7-ounce can or jar salsa verde (mild to medium)
6 large garlic cloves, roughly chopped
2 plum tomatoes, chopped
1 large yellow onion, chopped
1 1/2 tablespoons ground cumin
1 tablespoon plus 1 teaspoon chili powder
1 tablespoon dried oregano
Dash of cayenne pepper

EASY MEXICAN PORK BURRITOS

Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

Steps:

  • Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
  • Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
  • Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
  • Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

MEXICAN STYLE SHREDDED PORK

This is an amazing shredded pork recipe similar to what you would eat in a rice bowl (or in an enchilada) at a Mexican restaurant. It is easy to prepare and simmers in a slow cooker all day, ready to enjoy when you arrive home. I serve it over rice (laced with lime juice and fresh cilantro), Cheddar cheese, salsa, guacamole, and a dollop of sour cream. Amazing!

Steps:

  • Season the pork generously with salt and pepper. Add the garlic, chile powder and cumin, and mix well, massaging the seasoning into the meat with fingers. Let the meat marinate for at least an hour, or refrigerate overnight.
  • Heat the oil in a wide cast iron skillet over medium heat. When the oil looks wavy, add the meat and let it sizzle, stirring occasionally, until lightly browned and cooked through, 5 to 7 minutes. Turn off the heat and keep meat warm.
  • Heat the tortillas on an ungreased hot griddle or cast iron pan. Turn them once or twice until hot and slightly puffed. As they come off the griddle, stack them on a cloth napkin to steam, with another napkin on top.
  • To assemble the tacos, stack 2 hot tortillas on a plate. Spoon on a little sizzled pork, then top with a spoonful of tomatillo salsa and another of salsa cruda. Garnish with radishes and cilantro sprigs. Serve and eat immediately.
