  • Mix ground beef, half the onions, bread crumbs, pepperjack cheese, and eggs in a bowl; form into 12 patties.

  • Place ground beef in mixing bowl and combine with the breadcrumbs, egg, salt, pepper and red pepper, and chives.
  • Divide into 4 sections, add the salsa and cilantro to each and shape making large circular patties. Cut in half. (to fit flour tortilla).

  • Start a charcoal fire or heat a gas grill. (Check out our grilling guide for how.) Form the patties into 3/4-inch burgers, being careful not to make them too loose or too large, then make a deep depression in the center of each burger with your thumb.
