BEEF AND BLACK BEAN ENCHILADAS
This was "created" on a day with minimal ingredients in the house. I am more of a fan of ground beef rather than shredded beef but either can be used. Also, my preference for this dish is medium ground beef. I know!! More fat, but the flavor is great!! Again - your choice! I guessed on the ounces of the can of black beans - just the normal size is fine. Easy to modify to your personal taste.

Steps:
- Prepare Enchilada Sauce #402189.
- As it simmers, fry the ground beef and onions - season well with salt and pepper.
- When the ground beef is cooked through, remove from heat. Allow to cool slightly.
- Stir in half of the can of black beans (or more if you prefer!) and 3/4 cup of the shredded cheese.
- Assemble enchiladas by placing several tablespoons of filling in the tortilla and rolling it up tightly.
- Place 1 cup of Enchilada Sauce #402189 in the bottom of the casserole (enough to cover the bottom).
- Place enchiladas side by side in the pan, top with remaining enchilada sauce and sprinkle remaining cheddar cheese on top.
- Bake in a covered casserole pan at 350°F for 30-40 minutes, until tortillas are tender and heated through.

- In a skillet, cook beef, onion and green pepper over medium heat until beef is browned; drain fat. Add peas, tomatoes, salt and pepper; bring to a boil. Reduce heat and simmer for 30 minutes, stirring often.

MINCED BEEF WITH BLACK-EYED BEANS
This is a Pakistani dish. When ever my mother makes this dish there is none left. She does not like to be heavy handed with spices, which makes her cooking light, yet aromatic. We usually eat this dish with warm pita, raita (yogurt laced with a dash each of salt, black pepper, cumin powder and chopped green chilies), and finely sliced onion laced with lemon juice.

- Heat oil in a large deep skillet over medium-high heat. Add onion, and saute until light golden, then throw in the garlic, and cook for 1 minute. Put in 1/4 cup of the water and tomato, then season with salt, red chili powder, cumin, and turmeric. Simmer for 1 minute.
- Add beef and cook for at least 10 minutes, adding another 1/4 cup of the water when it gets dry. When the beef mixture is dry, pour in the black-eyed peas. Cook for 3 minutes. Stir in the remaining 1/4 cup of water, and reduce the heat to low. Cover and simmer until all of the water has cooked down, and you can see the oil.
- Remove from the heat and mix in the garam masala. Transfer to a serving dish and sprinkle the lemon juice, cilantro, and green chilies over the top.

BLACK EYED PEAS WITH HAMBURGER (PINQUITO STYLE)
Pinquinto beans are a small pink bean that is very pouplar on the Central Coast of California, where I used to live. I have adapted my Pinquito bean recipe to work with Black Eyed Peas. The main reason I have posted so few recipes is because I cook by feel, rather than measuring and I rarely make the same thing exactly the same way, over and over. This recipe is VERY flexible. If you want it more like beans, use more Black Eyes, if you want it more like soup, use less. The cooking time includes 1-1/2 hours cook time for the Black Eyes.

- Set cooked black eyed peas in their cooking liquid aside.
- Sautee Beef, Bell Pepper, Onion, and Celery until veggis are crisp-tender.
- ***Note, I prefer my veggis very well done and very tender, so I start the veggis and add the beef when they are about half-way done.
- Add remaining ingredients and simmer for about 15 minutes. Adjust the salt and pepper to your taste.
- *****Note: Your cooked Black Eyed Peas should have about 1-2 Cups of the cooking liquid left. Add more Beef Broth or Water if desired.

BEEF AND BLACK BEANS WITH NOODLES

- Cut green pepper into julienne strips about 1/8 inch thick; cut beef into strips 1/8 inch wide, 2 inches long and about 1/8 inch thick.
- Remove heads and tails from bean sprouts, and rinse.
- Mix cornstarch with a little chicken stock to make paste; then stir in remaining stock.
- Rinse black beans to remove salt; drain.
- Cook noodles in boiling water until tender, 1 to 2 minutes, depending on thickness of noodles. Drizzle with 2 teaspoons peanut oil.
- Heat 2 tablespoons peanut oil in a wok until it shimmers; stir-fry black beans, ginger and garlic for 30 seconds; add beef and green pepper and stir-fry until beef loses its color.
- Add bean sprouts and spring onion and stir-fry.
- Make a well in center and stir in chicken stock mixture and oyster sauce; stir-fry until mixture thickens slightly.
- Remove from heat and stir in drained noodles.
