CARAMEL APPLES
A deep, rich caramel makes for a classic shiny caramel apple.

Steps:
- Add the sugar, corn syrup and 1/2 cup water to a small saucepan over medium-high heat. Stir a few times before the sugar begins to boil to combine the ingredients. Attach a candy thermometer to the inside of the pan and bring the syrup to a boil. Cook until the syrup begins to turn an amber color, then swirl the syrup to even out the color. Continue to cook until the syrup is a deep amber and the thermometer reads between 375 and 380 degrees F, then remove from the heat. Carefully pour in the cream and gently whisk to combine. Stir in the butter, vanilla and a pinch of salt until smooth. Keep off the heat but keep the thermometer attached to the pan.
- Pierce the apples through the stem ends about halfway through with candy apple sticks. Line a baking sheet with parchment and lightly spray with nonstick cooking spray.
- When the temperature of the caramel reads around 190 degrees F, dip an apple, using the stick as a handle and swirling to coat completely. Allow excess caramel to drip off the bottom and use a spatula to help remove any large amount of caramel, as it will pool around the apple when you set it down to cool on the lined baking sheet. Repeat with the remaining apples, gently heating the caramel on the stovetop over low heat, stirring, if it gets too thick for dipping. Allow the caramel to set and cool completely before serving or wrapping apples, about 1 hour. (See Cook's Note.)

- Repeat until entire apple is carved.
- Insert a popsicle stick on the side with the skin.
- Dip the apple ball in caramel.
- Dip again in preferred toppings.

MINI CARAMEL APPLES
Found this keeper in the Family Fun magazine. I loved making it with the kids and they loved being creative. Use your imagination and your favorite toppings for this great snack. You will need a package of lollipop sticks and a melon baller and small paper candy cups (or cupcake paper) for this recipe. One Granny Smith apple makes approximately 8 mini apples.

Steps:
- Cut the lollipop sticks at an angle on one end to create a small point to insert into the mini apple.
- With the melon baller, scoop little balls out of the apple making sure to have a section of apple peel on each ball.
- Push half the lollipop stick into the peel of each ball and pat the apple dry.
- Melt the butterscotch, peanut butter and chocolate pieces according to the package directions.
- Dip and swirl the mini-apples in the melted chips, then roll them into the sprinkles, coconut or chopped nuts if desired.
- Place the mini apples in paper candy cups to set.

- 1. In a 8-cup microwave safe measuring cup (like Pyrex), combine the sugar, water and light corn syrup.
- 2. Microwave on high in 2-minute intervals until the mixture just starts to change color (this could take anywhere from 4 to 7 minutes depending on the strength of the microwave).
- 3. Carefully remove from the microwave and let stand until a golden caramel forms, about 2 minutes.
- 4. Using a wooden spoon, stir in the softened butter, heavy cream and a generous pinch of salt. Let cool for at least 30 minutes.
