MOCHA-PECAN MUD PIE
From Southern Living -- I have not made this yet, but I went looking for deserts for a dinner I am having at my house and this is what I decided on! The nice benefit is it is made with lightened items! Cook time is time for freezing.

Steps:
- Place pecans in a single layer on a baking sheet coated with cooking spray; sprinkle evenly with sugar.
- Bake at 350° for 8 to 10 minutes or until lightly toasted. Cool.
- Stir together ice cream, 3/4 cup cookie chunks, and 1/3 cup pecans; spoon into piecrust. Freeze 10 minutes. Press remaining cookie chunks and pecans evenly on top. Cover with plastic wrap, and freeze 8 hours. Drizzle individual slices evenly with chocolate syrup.

- In a food processor, chop together the chocolate cookies and melted butter. Press mixture into a 9 inch pie shell and freeze for 10 minutes.
- In a large bowl stir together the ice cream, almonds and chopped candy bar until well combined. Pour mixture into pie crust and freeze for 30 minutes.
- Combine chips and butter in a measuring cup and microwave on high for 1 minute. Stir chocolate mixture and microwave for another 30 seconds if necessary. Drizzle mixture over frozen pie and sprinkle with 2 tablespoons toasted almonds, chill and serve cold

- Preheat oven to 400 F.
- For the crust, cut the butter into the flour with a pastry knife until the mixture resembles coarse cornmeal.
- Add about 3 Tbsp water and combine until dough forms a ball.
- Roll it out on lightly floured board.
- Place crust in 9-inch pie plate and crimp the edges.
- To make filling, place all of the filling ingredients, except the pecans, into a blender or food processor and puree until the chocolate chips are completely ground up and everything is smooth.
- Pour the filling over the pecans in a bowl, and stir just enough to coat the nuts.
- Pour the filling into the pie shell.
- Bake at 400 F for 10 minutes, then reduce heat to 350 F and bake another 30 minutes or until the filling is set but still moist.
- Cool completely before cutting.

This is a very easy recipe to make and is very full of flavor!! I do believe all will love it! This pie is at its best when garnished with whipped topping and chocolate curls.

- Preheat oven to 350 degrees F (175 degrees C).
- In a double boiler, over hot (not boiling) water, melt chocolate morsels; stir until smooth, and set aside.
- In a cup, dissolve coffee in 1 tablespoon boiling water.
- In a large bowl, beat cream cheese and sugar together until smooth. Add eggs one at a time, beating well after each addition. Add melted chocolate and coffee; mix well, then blend in frozen whipped topping.
- Pour mixture into pie shell and bake in preheated oven for 35 to 40 minutes. Turn oven off and allow pie to stand in oven with door ajar for 15 minutes. Remove from oven and let cool. Refrigerate 20 to 30 minutes before serving. Garnish with whipped topping and chocolate curls just prior to serving, if desired.

It's hard to believe, but 15 years ago coffee shops didn't offer much in the way of cool summer drinks, aside from iced coffee or tea. It wasn't until 1995 that the Frappuccino was born: At the request of customers, the manager at a Starbucks in Santa Monica, CA, started experimenting with a blender, mixing together espresso, milk and ice. The concoction became so popular that nearby stores started serving it, too, and once Starbucks headquarters got wind of the new hit drink, the company added mocha and coffee Frappuccinos to its menu - plus more than 40 flavors since then. - Make the coffee ice: Stir the sugar into the coffee until dissolved, then let cool. Pour into a 16-cube ice-cube tray and freeze until solid, about 3 hours.
- Make the chocolate syrup: Combine the sugar and cocoa powder in a saucepan and slowly whisk in 2/3 cup hot water. Bring to a simmer over medium heat, whisking, until the sugar dissolves, 3 to 5 minutes; do not boil. Remove from the heat and stir in the chocolate, honey and vanilla until smooth. Transfer to a bowl and refrigerate until cool.

- Combine first 4 ingredients in processor. Using on/off turns, cut in butter and shortening until mixture resembles coarse meal. Blend in orange juice and enough water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic and chill 1 hour. (Can be prepared 1 day ahead. - Melt butter in heavy small saucepan over medium heat. Stir in cocoa, then cream and espresso powder. Pour into large bowl. Add corn syrup, sugar, eggs, vanilla and salt; whisk until well blended. Stir in pecans. Pour filling into pie crust. Bake until puffed and set, about 1 hour. Transfer to rack and cool completely. (Can be made 1 day ahead. Cover and let stand at room temperature.)
- Cut pie into wedges. Transfer to plates. Serve with dollops of Coffee Whipped Cream.
