- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

MOM'S HOMEMADE WHITE BREAD ROLLS (OR LOAVES)
My mom makes this every year for the holidays, these are delicious and pretty easy to make. I've gotten detailed in the instructions, because she gave me this recipe when I was first learning how to make bread.

Steps:
- Dissolve yeast and 2 Tablespoons sugar in 1/4 cup warm water, set aside.
- Microwave 2 cups water, shortening and salt, until the shortening melts.
- Stir this mixture until it completely dissolves.
- Start adding flour about 2 cups to start to this mixture, just a little at a time so that it stays smooth and doesn't get lumpy.
- Then add yeast mixture, mix well.
- Continue adding flour and then turn out on floured surface and knead in remaining flour, until no longer tacky.
- Grease a large bowl or pan with vegetable oil.
- Put the bread in this bowl cover and let it rise.
- If you use a fast acting yeast it should take about 45 minutes.
- Turn out on the counter and fold in sides, put back in bowl and let rise again.
- After the second rising it is time to turn it out and make the rolls or bread and place it in a pan.
- Make sure the pan is well oiled with vegetable oil.
- Place them in the pan (pans) and let rise one last time and then bake them at 375°F oven until done, about 20 minutes or so.

MOM-MOM'S WHITE POTATO PIE
My Mom-Mom Beatrice taught me how to make a white potato pie when I was 12 years old. I always remembered the recipe and I make it every holiday for parties. - Preheat oven to 350°. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle half the mixture in the bottoms of both pie crusts; bake until lightly browned, 7-10 minutes. , Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, about 10-15 minutes, stirring occasionally. Drain. , In a large bowl, mash potatoes with butter; beat until fluffy. Add eggs, condensed milk and vanilla; mix well. Stirring continuously, slowly add evaporated milk; mix until smooth. Add remaining sugar, cinnamon and nutmeg; mix well. Pour potato mixture into prepared crusts; do not over-fill. Sprinkle with remaining cinnamon sugar mixture. Bake until pie is set or until a knife inserted in the center comes out clean, about 45 minutes. Cool on a wire rack 1 hour before serving. If desired, sprinkle with confectioner's sugar.

MOM'S CRUSTY WHITE POTATO BREAD
This is a bread that bakes with a hard crust on the outside and soft flavorful bread inside. For me, the crust comes out a bit dark but it might just be my oven. The flavor is superb though! To decrease rising time, I set up a space heater on my granite counters to warm the counters and increase the air temperature near the dough.I have taken 1/4 of the ingredients and made it successfully in the bread machine, too!

Steps:
- Mix warm water, yeast, sugar, potato flakes and gluten in a small bowl. Let sit till foamy.
- Transfer yeast mixture to a mixing bowl (Bosch, Kitchen aid or by hand).
- Add salt, 1 cup of oil, eggs and 4 cups of the flour to the yeast mixture and mix with a wire wisk till all is throroughly combined and smooth.
- Change to your kneading attachment and slowly add the remaining 8 cups of flour. Mix on low for 15 minutes or knead by hand until smooth.
- Put the remaining 2 T oil into a large bowl, greasing the sides where the dough will touch.
- Place dough in greased bowl and let rise till double. About one hour.
- Heat oven to 400 degrees.
- Punch down and divide into 4 loaf pans, let rise till double. About 30 minutes.
- Brush risen loaves with egg yolk and sprinkle with the sesame seeds.
- Place in oven for 15 minutes.
- Reduce temperature to 350 degrees, keeping the loaves in the oven, set the timer for 45 minutes.
- Remove from oven and let cool 5 minutes. Remove loaves from pan and place on a wire rack to cool.
- Slice and spread with butter. Yummy!

- Heat milk in a large saucepan over low heat until it bubbles; stir in butter or margarine, sugar and salt, then cool until lukewarm. Add warm water and potatoes and sprinkle in yeast until it dissolves. Then stir in 6 cups of the flour and mix all together. Add the remaining 4 to 5 cups of flour and mix. Let rest 15 minutes.
- Turn dough out on a floured surface and knead softly until dough is elastic and smooth. Lightly oil a large mixing bowl; add dough and turn to coat. Cover with a damp cloth and let rise 1 hour or until dough has doubled in volume.
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease two 9x5 inch loaf pans.

- Bake at 400 degrees F (200 degrees C) for 30 minutes or until loaves sound hollow when tapped on the bottom.

- Starting the night before (or early morning if you want to bake for the evening), in a large mixing bowl use your hands to mix the flour, yeast, salt and enough water to form a soft and sticky dough. You may have to add more water depending on a variety of factors, including the type of flour you use. Do not knead, but cover and let the dough rise at room temperature. When you get up in the morning, or a while before baking in the evening, wet your hands and lift the dough onto a flate, wet surface. Gently stretch it and fold it 2 to 4 times -- that's it. Return it ot the same bowl, cover and let it rise until doubled in size. This will take about an hour or so. If it is cool in the room, put the dough in a warmer area to do this final rise. At this time, find a bowl that will accommodate double the size of the risen dough and line it with a cotton or linen towel dusted with flour. Turn the risen dough (should have doubled by now) out with wet hands and again, fold it over itself about four times. (Personally, I skip this aforementioned step and the bread is wonderful.) Turn into the towel-lined bowl and let rise for one to four hours, depending on the room temperature. Preheat your oven to 425 degrees Farenheit. Once the dough is doubled, turn onto a well-floured peel or stiff cardboard. Ideally you will bake this on a pre-heated pizza stone or heavy baking sheet. Use the peel or cardboard to transfer the dough onto the baking surface. Bake until the crust if golden brown which may take 60 to 75 minutes. The magazine calls for the bread to cool for two hours, bottom up, but you can enjoy it minutes out of the oven.

- Add enough remaining dough to make dough easy to handle.
- turn out dough into lightly floured, cloth covered surface and knead till smooth and elastic.

MOM'S TWO-CRUST POTATO PIE
I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. - Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
- Preheat oven to 375 degrees F (190 degrees C).
