HOMEMADE DEVILED HAM SPREAD
I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

Steps:
- Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
- Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

DEVILED HAM SPREAD
Going through old family recipes I found this one from my Mom's cousin. Mae had a reputation as an excellent cook and this is a testimony to her culinary skills! It is so quick and easy to make! This is especially nice to serve during the upcoming winter holidays. You can make about 30 tea sandwiches with this recipe. Or use it as a dip for crackers or even filling for celery sticks! I hope you will enjoy it and also the compliments that are sure to come your way! Note: Prep time does NOT include chilling or making sandwiches or filling celery sticks.

- Stir creamy salad dressing, sweet pickle relish, mustard, black pepper, and salt in a large bowl until thoroughly blended.
- Grind smoked ham, hard-cooked eggs, green onions, green bell pepper, and celery together into a bowl with a food grinder, spooning tablespoons of salad dressing mixture into the grinder for moisture as you work.

- Pulse 8 ounces coarsely chopped country ham or good deli ham in a food processor until finely chopped.
- Transfer to a large bowl and add all the remaining ingredients except salt and black pepper. Add salt and pepper to taste being careful not to overly salt the mixture.
- Serve immediately or refrigerate up to two days for serving on crackers or toast. Also makes a great sandwich spread on sourdough bread.
- Cook's note: The hot sauce will not add heat to the mixture, it adds a much needed brightness. If you like, add a dash at a time but I highly recommend adding it. The cayenne will definitely add a kick, so use less or leave out if you like.

- Add all of the ingredients to the bowl of a food processor. Pulse to combine, scraping down the sides of the bowl as needed.
- When the ham salad spread is smooth, transfer to an airtight container and refrigerate for several hours or overnight.
- Serve slightly chilled or at room temperature with crackers, mini angel flake biscuits with crudite or on cucumber slices. Can also be used as a filling for sandwiches.
