HOT CRAB AND CORN DIP

- Preheat the oven to 375 degrees F. Melt 1 tablespoon butter in a skillet over medium-high heat. Add the shallot and cook until softened, about 1 minute. Add the corn and jalapeno; cook, stirring, until softened, about 3 minutes. Add the sherry and cook, stirring, until evaporated, about 2 minutes. Season with salt and pepper.
- Transfer the corn mixture to a large bowl and add the crabmeat. Stir in the monterey jack, sour cream and 1/2 cup crushed crackers. Transfer to a 1-quart baking dish.
- Combine the remaining 1/2 cup crushed crackers with the cheddar, chives and Old Bay in a medium bowl. Work the remaining 1 tablespoon butter into the crumb mixture with your fingers until combined. Sprinkle the crumb topping over the crab mixture. Bake until golden brown and heated through, about 20 minutes.
- Serve with butter crackers or sliced baguette.

- Cook the corn according to package directions.
- In a nonstick skillet sprayed with nonstick cooking spray; melt the margarine.
- Add the onion and bell peppers.
- Saute gently, do not let the onion brown.
- Drain the corn and return it to the sauce pan.
- Add the onions and peppers to the corn.
- Add the chilies; and warm through.
- Sprinkle with Smoky Paprika and serve.
- Serve.

- In a large bowl, combine eggs and sour cream. Add the corn, Monterey Jack cheese, bread crumbs and pepper; mix well. , Pour into a greased shallow 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 35 minutes. Sprinkle with cheddar cheese; bake 5-10 minutes longer or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.

- Please note: The majority of the time spent preparing this dish is in chopping the items listed. However, you can use a food processor if you prefer to cut down on time (although the time is already fairly reasonable). If using a food processor, do not over chop or process the items, simply pulse the items so that the items are fairly intact and not mashed.
- When chopping items listed, be sure to chop them fairly small. In a medium sized mixing bowl, add all ingredients, making sure to add the Kraft Zesty Italian Dressing last. Mix well.
- For those who prefer a little bit of spice, add the jalapeno. Also, if you like a little more flavor, you can add slightly more dressing.
- Serve alone as a side dish or with corn chips as this makes a great dip.

- Stir together cheese, corn, mayonnaise, scallions, cilantro, and chiles in a small bowl. Lightly brush 1 tortilla with some of oil. Turn tortilla over and spread 1/2 cup filling over half, then fold other half over to form a half-moon. Assemble 3 more quesadillas in same manner.
- Heat lightly oiled grill pan over moderate heat until hot, then cook quesadillas, 2 at a time, turning over once, until cheese is melted, about 4 minutes total per batch. Transfer to a cutting board and cut in half.

- Shuck the corn, and then steam it in a large pot filled with 2 inches of water. It takes about 8-10 minutes for the corn to get tender. Let the corn cool and then slice it off the cob.

- Before you get started, be sure that all of your ingredients are prepared and ready to go near the stove. The optional jalapeño adds some flavor and some heat. If using a fresh pepper, remove the seeds and ribs, then finely chop. For jarred jalapeños, just finely chop them.
- Melt the butter in a small-to-medium Dutch oven or large, deep skillet. Add the onion, jalapeño (if using), and 1/4 teaspoon of the salt. Cook, while stirring often, until the onions are tender and translucent, about 4 to 5 minutes. Add the garlic and cook until fragrant while stirring, about 30 seconds.
