MRS. SCHREINER'S SPLIT-PEA SOUP

My family loves split-pea soup and this is the best recipe for it I have found! I like to substitute canned chicken broth for the water and add a bit more ham. This recipe comes from Gourmet Magazine,1995. Delicious!

Steps:

  • In a large heavy kettle or stock pot cook bacon over moderate heat, stirring, until crisp and transfer to paper towels to drain.
  • Pour off all but about 1/4 cup bacon fat from kettle and cook onions and carrots, stirring, until softened.
  • Add remaining ingredients and simmer 2 hours uncovered, stirring occasionally and adding 1 to 2 cups more water (or broth) if soup becomes too thick.
  • Remove kettle from heat and transfer ham hock with a slotted spoon to a cutting board.
  • Discard fat and bones and chop meat.
  • Return meat to kettle and simmer soup, stirring, until heated through.
  • Discard bay leaf.
  • Just before serving, crumble bacon and sprinkle over soup.
  • Makes 8 cups.

1/2 onion, chopped
2 carrots, cut into 1/4-inch dice
1 lb dried split peas
2 1/2 quarts water (or chicken broth)
1 smoked ham hock
1 teaspoon salt
1 bay leaf

Steps:

  • Cook on high to get it hot, if you have time, then lower the heat setting to low and cook 8 hours.
  • Don't fill the crock pot too full, due to foaming.
  • Stir, adjust the seasonings and serve.
  • If you like the soup creamy, take out 1/2 c. of the soup and puree in food processor, then blend back into the soup.
  • Serve

  • Put all ingredients in pot; heat to boiling.
  • Lower heat to simmer; simmer uncovered for 1 hour.
  • Pour into blender in batches or use hand blender to purée all. return to stove to heat through.
  • Stir in barley, if using. May be garnished w/bacon, croutons, sour cream, etc., but good on its own.

Jamaican Golden Split Pea Soup image

Steps:

  • Bring the broth and split peas to a boil in a large pot over med-high heat.
  • Cover, reduce the heat to a simmer and cook until the peas are soft, about 45 minutes.
  • Add all remaining ingredients.
  • Cover and cook over medium-low heat until the vegetables are tender, about 45 minutes.
  • Pick out and discard the thyme.
  • Puree the soup in batches in a food mill, food processor or blender (I use my imersion blender and puree it right in the pot).
  • Taste and adjust the seasonings with additional allspice, salt and pepper if needed.
  • This soup can be refrigerated for up to 5 days or frozen for several weeks.
  • Stir well after reheating.

  • In a large pot or Dutch oven over medium heat, heat olive oil. Cook onion, carrot, celery and garlic until onion is translucent. Stir in yellow and green split peas, broth, seasoning and salt. Steps:

  • Trim fat off the ham bone.
  • Rinse and picker over peas.
  • Heat oil over med-low heat. Add veggies and saute until wilted (10-12 mins).
  • Add peas and cook for 1 minute.
  • Add remaining ingredients except salt & pepper. Bring to a boil, reduce heat and simmer until peas are cooked.
