Steps:
- Put peanuts and sugar in food processor or clean coffee grinder and grind to powder. Place on small plate, moisten rim of a pilsner glass with some of simple syrup and place in peanut dust.
- Pour bourbon, espresso and remaining syrup into a cocktail shaker with ice cubes, shake and strain into prepared glass. Add fresh ice cubes and pour in stout to fill glass.

- In a separate large microwave-safe bowl, combine the peanut butter, chocolate chips, and butter. Microwave in bursts of 15 seconds, stirring in between each burst for 15 seconds until the mixture is melted and smooth. Add in the vanilla and salt. Pour over the cereal. Stir well until the cereal is evenly coated. Take care not to crush the cereal while stirring.
- Pour half of the cereal mixture into a gallon-sized resealable plastic bag and pour half of the powdered sugar over it. Seal and shake until the cereal is evenly coated. Repeat with the other half of the cereal and powdered sugar. Shake until all the cereal is well coated.
- Pour into a large bowl and enjoy! If desired, stir in a fun addition such as mini M&M's or mini chocolate chips.

- Preheat oven to 350 degrees. Grease two 9-inch round cake pans with cooking spray and line the bottoms of the pans with parchment paper rounds. Set aside.
- In a medium bowl, whisk the cocoa powder and boiling water until smooth. Set aside to cool slightly.
- In a large bowl, add the eggs, oil, sour cream, and vanilla and beat with a hand mixer until smooth, about a minute. In a separate bowl, whisk the flour, sugar, baking powder, baking soda, and salt. Add to the wet ingredients and and gently fold in the dry ingredients. With hand mixer on low, slowly pour in the cocoa/water mixture until combined, using a rubber spatula to finish mixing together the ingredients.
- Divide batter between prepared pans (a kitchen scale is great to ensure equal amounts). Sprinkle in 1/3 cup of chocolate chips into each of the pans. Bake for 40-45 minutes, or until toothpick inserted in middle of cake comes out clean. Transfer to baking racks and let cool for 10 minutes before removing cakes from pan to cool completely. Once completely cooled, transfer to freezer for 10 minutes to harden slightly.
