MUSHROOM, SHALLOT & SQUASH PIE
A hearty vegetarian main dish that will keep in the freezer for up to two months

Steps:
- Soak the dried mushrooms in 250ml boiling water. Meanwhile, soften the shallots in the olive oil and a third of the butter for 10 mins. Add the squash and cook for a further 10 mins until softening, then add the garlic and herbs and cook for 2 mins more. Set aside.
- In another pan, fry the fresh mushrooms in another third of butter until softened. Strain the porcini, reserving the soaking liquid, then roughly chop and add to the cooked mushrooms. Fry for 2 mins, then remove from the pan and set aside.
- Melt the remaining butter in the same pan, stir in the flour for 2 mins, then gradually stir in the stock and mushroom soaking liquid. Bring to the boil, stirring, and cook for 2-3 mins until thickened. Combine the sauce with all the veg, then transfer the mixture to a 2-litre rectangular pie dish and cool.
- Roll out the pastry on a floured surface until big enough to cover the pie dish. Cover the pie, trimming the excess pastry, then wrap well in cling film. Will freeze for up to 2 months.
- To cook, defrost the pie thoroughly in the fridge overnight if frozen. Heat oven to 200C/180C fan/gas 6, glaze the pastry with a little egg and bake for 30-40 mins or until golden and hot through.

CHICKEN AND MUSHROOM POT PIE WITH SQUASH CRUST
This is the best pie recipe I have ever invented, and the best thing is, there's almost no fat whatsoever in it so you can eat as much as you like!

Steps:
- Place squash cubes in a large pot and cover with water; bring to a boil. Reduce heat and simmer until tender, about 20 minutes. Drain squash. Mash and set aside to cool.
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a dry skillet over medium heat. Add chicken and mushrooms; cook and stir until chicken is no longer pink, 5 to 10 minutes.
- Drain chicken and mushrooms. Add mushroom soup. Fill empty can with water and pour in. Cook until mixed well, 2 to 3 minutes.
- Add flour and 1 egg to the cooled mashed squash. Mix to form the pastry. Transfer to a well floured surface. Divide into 6 pieces. Roll out 3 pieces to fit 3 nonstick pie pans. Prick the bottoms with a fork.
- Spoon chicken and mushroom filling over the pastry. Roll out remaining pastry and place over the filling. Beat remaining egg and brush over the tops.
- Bake in the preheated oven until golden, about 30 minutes.

MUSHROOM AND FARRO PIE
A spectacular centerpiece for a vegetarian meal. Flaky pastry gives way to cremini mushrooms and chewy farro (an ancient Italian grain) bound together by ricotta.

- Make filling:
- Cover farro with cold water in a bowl and soak 30 minutes, then drain in a colander, discarding soaking water.
- Bring farro, water (3 cups), and 1/4 teaspoon salt to a boil in a medium saucepan, then reduce heat and simmer, uncovered, until tender, 15 to 20 minutes. Drain.
- While farro cooks, melt butter with oil in a 12-inch heavy skillet over medium-high heat, then cook garlic and half of scallions, stirring frequently, 2 to 3 minutes. Add mushrooms, 1 teaspoon salt, and 1/2 teaspoon pepper and cook, stirring occasionally, until just softened, about 5 minutes. Add Madeira and simmer 1 minute. Transfer to a bowl and stir in farro, then cool completely.
- Stir in ricotta, remaining scallions, and salt and pepper to taste.
- Roll out pastry while filling cools:
- If pastry is in 1 piece, cut into 2 equal pieces. Roll out each piece on a lightly floured surface into an 11-inch square. Stack squares on a parchment-paper-lined baking sheet with a second sheet of parchment between them, then cover with plastic wrap and chill at least 30 minutes.
- Assemble and bake pie:
- Put a large baking sheet on rack in middle of oven and preheat oven to 400°F.
- Set aside top square of pastry on parchment. Spread cooled filling evenly over pastry on baking sheet, leaving a 1-inch border. Brush border with some of egg wash, and, using parchment, invert second square on top, lightly pressing to seal border. Brush top with remaining egg wash, then crimp border with a fork and trim with a pizza wheel or sharp knife.
- Cut a few small steam vents in top of pie and decoratively score pastry. Slide pie on parchment onto preheated baking sheet in oven and bake until puffed and deep golden brown, about 45 minutes.
BUTTERNUT SQUASH AND DUXELLES CASSEROLE
From the February 2010 "Fab Five" list of Vegetarian Times. (Duxelles is a paste of finely chopped mushrooms and shallots.) This is a wonderful comfort food that is actually fairly low calorie (depending on how much cheese you use).

- Pulse mushrooms in food processor until finely chopped. Transfer to bowl.
- Plus shallots in food processor until finely chopped. Add to bowl with the mushrooms.
- Melt butter in skillet and cook mushroom mixture about 10 minutes -- until mushrooms have released their liquid and most has evaporated and the shallots are starting to brown. Season with salt and pepper.
- Preheat oven to 350 degrees.
- Grease 9" deep-dish pie pan or gratin dish.
- Bring milk, flour, and garlic to a simmer in saucepan over medium heat, whisking constantly.
- Whisk in 1/2 c cheese and nutmeg. Season with salt and pepper.
- Spread 1/3 of squash slices on bottom of pan. Top with 1/3 cheese mixture and 1/2 of mushroom mixture.
- Repeat layers, ending with cheese sauce.
- Sprinkle with remaining cheese.
- Bake 45 minutes or until squash is tender and top is browned.
- Let stand 10 minutes before serving.
SAUSAGE, SHALLOT, AND SQUASH ONE-PAN MEAL
This is a roasted one-pan dish that is great as a side dish, wonderful over pasta or rice, or fabulous on its own with crusty garlic bread!

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine potato, bell peppers, shallots, and sausages with 3 tablespoons oil in a large bowl.
- Mix garlic powder, Italian seasoning, paprika, and pepper together. Stir into the sausage mixture. Transfer the mixture to a roasting pan or 10x18-inch griddle pan.
- Bake in the preheated oven until vegetables are tender, about 25 minutes.
- Mix zucchini, yellow squash, and remaining oil in a small bowl. Pour over the sausage and vegetable mixture and gently stir in. Continue baking until squash is tender, about 15 minutes. Serve warm.
