Steps:
- Scrub and debeard the mussels.
- In a saucepan large enough to hold the mussels with room to spare heat three tablespoons of the oil. Add the onion, scallions and garlic and saute over low heat until tender.
- Add the tomatoes and jalapeno peppers and bring to a simmer. Stir in the mussels and add the wine. Return to a simmer, cover and cook over medium heat until the mussels have opened, about 10 minutes.
- Remove the mussels to individual bowls, discarding any that have not opened. Add the lime juice and coriander to the sauce, pour over the mussels and serve.

- Reserve 4 small sprigs of cilantro for garnish. Remove the leaves from the stems of the rest, and discard the stems. Rinse and dry the leaves, and set them aside. You should have about 1 1/2 cups of loosely packed cilantro leaves.
- Heat the oil in a heavy 3-quart saucepan. Add the scallions, garlic and chilies, and saute a few minutes over medium heat until soft but not brown. Add the wine and lime juice, bring to a boil, then add the mussels.
- Cover, and cook until the mussels open, about 8 minutes. Using a slotted spoon, remove the mussels from the pan, and place in a bowl. Cover to keep warm.
- Return the saucepan to the stove, add the cilantro and simmer a few minutes, until the cilantro wilts. Place the contents of the saucepan in a blender, and puree. Pour back into the saucepan, add the cream and bring to a simmer. Return the mussels to the saucepan, cover and reheat briefly.
- To serve, place the mussels in 4 soup plates and spoon the sauce over each portion.
- Garnish with the reserved sprigs of cilantro.

Steps:
- Rinse the mussels in a colander under cold water, scrub the shells throughly, remove the tough, wiry beards and discard any mussels with broken or gaping shells.
- While the mussels drain, heat the oil in a large stock pot over medium high heat. Add carrot and jalapeno; saute, stirring occasionally, until they begin to soften and lightly brown, about 2 minutes.
- Add the garlic and 1/2 tsp of the lime zest and saute until fragrant, 30 seconds. Pour in the wine and raise the heat to high.
- As soon as the wine boils, add the mussels and cover the pot. Steam the mussels, shaking the pot once or twice, until the shells open, 5 - 6 minutes.
- Remove the pot from the heat. With a slotted spoon, transfer the mussels to a large bowl and keep warm.
- Return the pot with the cooking liquid to the heat add the cream, boil until the sauce reduces just a bit, 2 - 3 minutes.
- Add 1-1/2 T of the lime juice, the cilantro and chili sauce, if using.
- Taste and add more lime juice and salt if needed.
- Ladle the mussels into wide, shallow bowls, pour some of the sauce over each portion and serve immediately.
MUSSELS IN PASILLA BROTH WITH CORN, JíCAMA, AND CILANTRO

- Simmer stock and pasilla chilies in heavy medium saucepan over medium heat until chilies are soft, about 20 minutes. Strain pasilla broth into medium bowl, pressing on solids to extract as much liquid as possible. Discard solids in strainer.
- Heat oil in heavy large pot over medium-high heat. Add onion, corn, and garlic; sauté 1 minute. Add pasilla broth, mussels, butter, and lime juice. Cover and simmer until mussels open, about 2 minutes. Uncover; stir in jicama and cilantro. Season broth to taste with salt. Transfer mussels with broth to large bowl (discard any mussels that do not open). Serve, passing lime wedges separately.

SPICY GREEN MUSSELS

- To make a green curry paste, put cilantro, ginger, garlic, chiles, coconut, fish sauce, salt, sugar and lemon grass in a blender or food processor. Blend to a coarse paste, adding a little ice water if necessary.
- Rinse the mussels under cold water and remove the beards. Discard any mussels with broken shells, as well as any that are not tightly closed.
- Melt the butter in a heavy-bottomed soup pot over a medium-high flame. Add the mussels and stir well to coat. Raise the heat to high, add the broth or water, and put on the lid. Cook for 2 minutes.
- Add 1/2 cup of the green curry paste, stir well, and continue cooking for 4 to 5 minutes, until all of the mussels have opened. Sprinkle with the scallions.
- Bring the pot to the table and serve in wide soup bowls, ladling some of the broth over the mussels, along with a squeeze of lime juice. Pass the remaining green curry paste separately, if desired.

GUAJILLO CHILI MUSSELS - FORK IN THE KITCHEN

- Microwave whole dried chilis for approximately 15 seconds until pliable. If needed, microwave 15 additional seconds. Cut the tops of the dried chilis, and create a split down the side using kitchen shears. Remove seeds and any large ribs. Cut into 1/2 inch pieces. Place in a microwave safe bowl with 1 cup vegetable stock. Microwave for 4-5 minutes, checking halfway through for "tenderness".
- Using a food processor, blend together the peppers and 1-2 Tablespoons of the stock it cooked in (keep the rest! you'll use it later). Puree until a paste forms. Add the tomatoes, with some of the liquid drained. Puree until mixed. You may want to strain out the sauce if there are still tough skins, but I generally just leave it.
- In a large stock pot or dutch oven, heat butter over medium-high heat. Add finely chopped ginger and garlic, salt, and saffron. Cook for 1 minute, stirring continuously. Add white wine. Add tomato and chili mixture, stirring to combine. Add the remaining vegetable stock in which the peppers cooked in. Simmer for 3-4 minutes; taste for salt and pepper levels, adjusting as needed. Add the additional 1/2 cup of vegetable stock to thin out the sauce - add more depending on personal preference for mussel broth (it will be a little on the thicker side).
- Add the cleaned mussels to the pot, cover, and cook for approximately 5 minutes, if some mussels are still closed at this point, cook for an additional 1-2 minutes. At this time, discard any unopened mussels.
