The recipe for this easy salad came from my grandma, who made it in the summers with fresh dill and cucumbers from her garden.

Steps:

Nana's Potato Salad image

Steps:

  • Boil the peeled and cubed potatoes until fork tender. While the potatoes boil, sweat the onions and the celery in butter until soft and translucent; do not brown. Drain potatoes. While still warm, add the ingredients slowly, being sure not to mash the potatoes. Mix thoroughly. Serve warm or cold.

About 5 large potatoes; peeled, cubed and boiled
one medium onion, chopped
one stalk of celery, chopped
2tbsp. butter or margarine
1/4 cup raisins, chopped
about 1/4 cup fresh dill, chopped
about 1 tsp. dried rosemary
1/4 cup mayonnaise
3 tbsp. extra virgin olive oil
1/4 cup apple cider vinegar
salt and pepper to taste

CUCUMBER SALAD

Use any mix of cucumbers you like for this tangy salad. If using slicing cucumbers - the slightly thicker ones you'll find with seeds and sometimes waxier-seeming skins - you might want to peel them first and remove the seeds, which can dilute the dressing. To seed, simply halve the cucumbers lengthwise and use a teaspoon to gently scrape out the seeds. Feel free to play around with shapes, too. Slicing the cucumbers into rounds is easy enough, but half moons or other bite-size pieces are also welcome.

Steps:

  • In a large bowl, whisk together buttermilk, yogurt, lemon juice, poppy seeds, salt and pepper.
  • Add cucumbers and scallions and toss to combine. Salad can be made up to 4 hours ahead. Refrigerate until ready to serve.

Nana's Fruit Salad image

Steps:

  • In a large bowl combine fruit cocktail, mandarin oranges, apples, pears, and pecans.
  • In a small mixing bowl, mix cream cheese and lemon juice. Add enough fruit cocktail juice to achieve a smooth and creamy consistency.
  • Fold the cream cheese mixture into the fruit mixture and toss. Cover and chill for 1 hour before serving. Prior to serving slice bananas, add to fruit salad and toss again.

Kiyuri Namasu (Cucumber Salad) image

Steps:

  • Partly peel cucumbers leaving strips of green, and slice very thin.
  • Add salt to cucumbers and let stand for 15 minutes.
  • Combine remaining ingredients.
  • Press excess liquid from cucumbers and add to sauce. Mix well.
  • Add cucumbers to sauce.
  • Chill and serve as a relish or salad.

3 cups very thinly sliced cucumbers
1/2 teaspoon salt
1 teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
1/2 cup white wine vinegar
2 tablespoons sugar

Nana's Cucumber Salad image

Steps:

  • Peel the cucumbers and onion. Slice both very thin. I use a food processor.
  • Blend together the mayo & vinegar. Add salt & pepper to taste. Add sugar to cut the tartness if you would like it a little sweeter.
  • In a large bowl combine everything together. I like to make this a day early so that the cucumbers soak in the flavor of the sauce.
  • Enjoy!
